The production of unsulphured organic wine requires not only suitable weather conditions during the growing and ripening phase in the vineyard, but also a much higher workload for caring for the vines, as well as harvesting and selecting the grapes by hand.

From this point on, the grapes for red wines should be put into the mash as quickly as possible and the grapes for white wines should be pressed and fermented. During these processes, it is important to avoid any contact between the grapes, must, mash and wine with oxygen. For this purpose, gas is used that is heavier than air and displaces it from all containers. Even the bottling of the unsulphured wine is done by first filling the bottles with gas and only then filling the wine into the bottles. For this reason, unsulphured wines cost a little more.

By the way, they can be stored for just as long as sulphured wines, because during fermentation small amounts of endogenous sulphur are produced, which is sufficient to take over the task of the sulphur that would otherwise be added.

Why are there no unsulphured organic wines from Germany? Answer: Because the wetter climate does not allow the production of grapes of the required quality.
