The Sangiovese vines grow in the Casavecchia, Sicelle and Sicellino vineyards, on clay and calcareous soil with stony-rocky subsoil and south, east, north-east, east and north-west.
The average planting density of 4,800 vines / hectare and the low harvest of approx. 40 hl / ha allow the harvest of high-quality grapes that are harvested by hand.
The actual winemaking begins with the fermentation of the mash with the yeast naturally present on the grapes in stainless steel and concrete vats. It lasts at least 20 days. During this time, the mash is regularly pumped over and the pomace cap (consisting of the berry caps and the kernels) is pressed into the mash in order to be able to extract all the flavoring and coloring substances it contains.
The wine matures in small and medium-sized oak barrels and takes about a year, during which the malolactic fermentation also takes place. Then the contents of the individual barrels are combined in large concrete tanks to form a cuvée and bottled. The Chianti Classico matures there for another 3 months before it is allowed to leave the winery for the first time.
