Merlot and Cabernet Franc - grapes for this wine thrive in a vineyard on the plateau with clay and calcarious soil. They are harvested by hand and transported to the winery in small boxes. The next step is careful sorting of the grapes upon arrival in the vat room.
Fermentation takes place in thermoregulated tanks with gentle and slow extractions, adapted to the potential of each tank.
The average yield per hectare is 40 hl/ hectares. 50% of Château Fonroque's wines are aged in barriques and 50% in oval concrete tanks, modeled on ancient clay amphoras.

The biodynamic wines from Château Fonroque are naturally rich and distinguished. Clay in the soil gives them strength and depth. Limestone brings with it an assertive mineral character.
