The estate wines are intended as the winery's basic wines, which should be easy to access and still provide fun and enjoyment. The OEKO-Weingut Zang "Kurzschluss" semi sparkling wine is a cuvée made from three typical Franconian grape varieties, Riesling, Johanniter and Traminer.

Organic wine profile

• Color : pale yellow
• Noose : The bouquet shows floral, exotic notes paired with fresh citrus fruits, some orange zest and juicy apples. In the background you can see the long yeast storage with nuances of fresh bread crust.
• Mouth : The finely sparkling carbon dioxide hits the tongue with charged energy; has a refreshing and invigorating effect. In contrast, there is a creamy, soft impression on the palate, which harmoniously rounds off the overall picture of the Secco.
• Conseil de consommation : Servier à environ 6°C.

All grapes are harvested by hand and spontaneously fermented with the grapes' own yeasts. Only in exceptional cases, such as when a period of bad weather is approaching, are the grapes for this wine harvested by machine in order to avoid losing the grapes due to rot. With the exception of some SO2, no preservatives or fining agents are used.

 The wine was allowed to rest on the lees for a whole year and develop its aromas before some carbon dioxide was added, making it on a par with its Italian model, Prosecco Frizzante.

The La Baratta Prosecco Spumante is a real winemaker's prosecco for which the best grapes from their own vineyard are selected and which has received all the attention of the winemaker.

• Color: The hue is pale straw yellow; The perlage is very fine, continuous and persistent.
• Bouquet: delicate and intense, reminiscent of white flowers with fruity notes of green apple.
  Taste: The foam melts elegantly on the palate and leaves room for a pleasant feeling of freshness, which closes in softness for the right amount of amiability.
• Food ecommendations: Prosecco Süumante "La Baratta" is an excellent accompaniment on many occasions, be it with an aperitif, fish dishes, delicate starters or medium-aged cheese.

Organic wine preparation La Baratta, Prosecco Spumante extra dry

The grapes are harvested mechanically or manually, depending on the location of the vineyards and the quality of the grapes. Immediately afterwards, the best grapes are selected, pressed and fermented at a low temperature. This alcoholic fermentation is followed by the second fermentation with the addition of yeast and sugar in a pressure tank, so that the resulting carbonic acid is bound in the wine and later gives it the delightful mousse. For this organic Prosecco Spumante, the second fermentation takes 4 to 5 weeks. This long procedure makes the perlage in the glass finer and longer lasting. As a result, the longer this process takes, the more persistent the perlage will be later in the glass. Unfortunately, our state drinks this Prosecco Spumante in the form of the sparkling wine tax of € 1.02 + € 0.21 VAT.

The La Baratta Prosecco frizzante is a real winemaker's prosecco for which the grapes come from their own vineyard and to which the winemaker's attention was paid and which was even closed with a hand-tied cord at the winery.

The Deneufbourgs grow the Muscat petit grain vines on a sun-drenched ridge
swept by the Tramontane - an intermittent, violent wind that drives moisture out
of the vineyard and protects the grapes from fungal diseases.

Organic wine - processing, Domaine Deneufbourg, Muscat de Rivesaltes AOP

For this naturally sweet wine, the grapes of the Muscat Petit Grain variety (the small berry Muscat vine) are harvested by hand and optimally ripe and high in sugar, and fermented in the classic way until fermentation comes to a standstill due to the resulting high sugar content. At this point the wine has a natural alcohol content of 14%. To further stabilize this wine, 1% pure alcohol is added.
