Organic wine profile

On its own, this white organic wine Domaine Pommier Petit Chablis is anything but small. Because its aromatic scents with the accent on white flowers, as well as the fullness on the palate, accompanied by a fine refreshing acidity and a nice length in the finish are absolutely convincing.
Enjoy it at a temperature of 10 to 11°C. Serve it as an aperitif, with seafood appetizers, with fried fish.

Organic wine processing

It is a four-hectare vineyard on the Plateau de Lignorelles, located above the Vaudésir Grand Cru site. Here the Chardonnay vines, aged 15 to 25 years, grow on clay and calcareous soil, which provided the grapes for this wine.

The actual winemaking begins with the careful sorting of the grapes, followed by the destemming and pressing of the berries. The alcoholic fermentation starts spontaneously with the grapes' own yeasts in thermoregulated stainless steel tanks. A few months later, lactic acid fermentation begins, transforming the malic acid present in the wine into lactic acid. This process is also called biological acid degradation. Finally, this white organic wine matures for another 6 months on its fine lees, which intensifies its aromas and taste and improves the shelf life of this organic wine.
