Château Pontet Canet, Pauillac, 5eme Grand Cru Classé, biodynamic wine, 2021, from € 114.60

This biodynamically produced wine Château Pontet Canet 5ème Grand Cru Classé from a difficult vintage once again surprises the experts with its exceptionally high quality, which is rated with high scores.

Biodynamic wine - profile

In view of the reviews from professional wine critics and wine testers - see below, which are full of praise for this wine, we allow ourselves , to no longer give a rating ourselves and limit ourselves to the moderate statement of the Revue du Vin de France  "This vintage has produced an extremely refined and balanced wine. It displays lively, juicy fruit flavors in a gentle ensemble supported by well-defined tannins. Creamy texture, long and brilliant. The finish is appealingly spicy and spicy. 95-96/100 points.

You will never be able to understand all the other reviews with imaginative phrases from the sommelier repertoire and copywriters with endless lists of scents and aromas of a young, closed wine that still has its entire development ahead of it.

Vinum: 20/20 points: Actually leaves you speechless at first, but if it absolutely has to be: sophisticated, complex aromas of flowers, herbs, special minerality too; In the mouth it is almost transcendent, dense and yet transparent, great depth and length thanks to the uniquely fine-grained tannin, mineral freshness and absolute sophistication, and in the finish the pure impression of ripe grape berries.
Weinwisser: 96/100: Enchanting bouquet, ripe heart cherries, nougat praline, enchanting iris scent, licorice and perfumed pipe tobacco. On the energetic palate with a silky texture, perfectly balanced breed, very vibrant, close-knit ripe tannin structure, like cocoa powder, perfectly formed David body. In the concentrated finale, black berry contours, cooled Earl Grey, fine-grained astringency paired with delicate bitterness, never-ending back aroma.
Rene Gabriel: 19/20:< /span> Velvet, dense, creamy, finely opulent, complex, deep bouquet, black cassis, licorice, black currant, black chocolate, truffle, graphite. Concentrated, complex, powerful, elegant palate with creamy, dense, dark fruit, lots of fine tannins, creamy, full structure, dense, strong, dark, varied, sweet aromas, very long, dense, full finish with many back aromas. < /span>
Suckling: 95-96/100: Plenty of blackberry and blueberry with wet earth and crushed stone. Some spice, tobacco and lead pencil, too. It's full-bodied with layered tannins and brightness. Fine and chewy at the end.
Gerstl 90+/20: A very elegant and seductive Pontet Canet with lots of dark fruit of cherry, blackberry and some cassis. Sensual spice in the background with a slightly cool, ethereal expression. This wine conjures up pleasant goosebumps all over my body. This year too, the magic of Pontet Canet, its profound power and intensity is unmistakable. Compared to previous years, everything seems more delicate and Burgundian, which I really like. The first sip shows the very harmonious balance in this wine with juicy acidity and fine creamy tannins. It is a Burgundian elegance that will delight lovers of classic Bordeaux wines. And yet you don't have to miss the usual power and aromatic intensity of Pontet Canet for a moment. In the finish, more and more delicate roasted aromas reveal themselves, which go so well with this wine. This wine touches me very much and shows that even in years with difficult weather conditions, absolutely brilliant wines are created, especially when as much is invested in biodynamics as Pontet Canet.

It's amazing how many scents and aromas can supposedly be contained in a young, still sealed wine that has been in  16 months. Barriques and amphoras spent. The descriptions may be accurate in a few years. It could be a 21st birthday gift for your son or daughter born in 2021.

Biodynamic wine - production, Château Pontet Canet, Pauillac 5ème Grand Cru Classé, Pauillac, red, 2021

The grapes are harvested by hand, the grapes are then checked on a special sorting table and less perfelt grapes are selected.
The mash fermentation takes about four weeks. Château Pontet-Canet renews 60% of its barrique barrels every year. Depending on the vintage, the wine matures in these for 16 to 20 months. The wine is not filtered before bottling. Since the 2012 vintage, around a third of the harvest has been aged in amphora-like ceramic tanks that were specially developed for the estate.

Around half of the production matures in new barrels, 10 to 15% in second-fill barrels and, since 2012, 30 to 40% in dolias (concrete amphorae) and ceramic amphorae. This new approach to the way the wines are aged shows that Château Pontet Canet produces biodynamic wines, free from questionable artifice. The aging time in barriques and in amphorae varies between 16 and 18 months depending on the type of wine.

Biodynamic wine - preparation, Château Haut Bages Liberal, Cinqieme Grand Cru Classé, Pauillac, red, 2021

2021 was one of the best vintages of the past decade for Cabernet Sauvignon grapes in the Medoc. With an unusually high 90% proportion, they set the tone at Château Haut Bages Liberal and are responsible for the great class of this organic wine. The Merlot grapes, on the other hand, were affected by mildew and had to be picked very carefully during the manual harvest. As a result, their crop yield was significantly lower than normal. Overall, the average yield fell to 40 hl/hectare.

In biodynamic viticulture and winemaking, it is common practice to mix the must spontaneously with and without the yeasts found on the grapes to ferment so-called pure yeasts or aromatic yeasts.

40% of the wine matures for 16 months in new barriques, 40% in second-occupancy barriques and 20% in amphoras and concrete.

Biodynamic wine - production, Château Fonroque, Saint Emilion Grand Cru

Merlot and Cabernet Franc - grapes for this wine thrive in a vineyard on the plateau with clay and calcarious soil. They are harvested by hand and transported to the winery in small boxes. The next step is careful sorting of the grapes upon arrival in the vat room.
Fermentation takes place in thermoregulated tanks with gentle and slow extractions, adapted to the potential of each tank.
The average yield per hectare is 40 hl/ hectares. 50% of Château Fonroque's wines are aged in barriques and 50% in oval concrete tanks, modeled on ancient clay amphoras.

The biodynamic wines from Château Fonroque are naturally rich and distinguished. Clay in the soil gives them strength and depth. Limestone brings with it an assertive mineral character. The mouthfeel of this Grand Cru Classé offers a beautiful freshness combined with a lot of elegance and sophistication. Its length is a guarantee for harmonious maturation.

Vin biodynamique - production, Château Mazeyres, Pomereol AOC
