Organic wine - profile

  • Colour: intense red with blue reflections
  • Nose: The fruity aromas have an almost explosive effect on the olfactory organ. Notes from the barrel aging are added, reminiscent of liquorice and spices and dry Mediterranean herbs, increasing the complexity and attractiveness.
  • Mouth: The first impression is elegant and fresh. Later it becomes fleshy and structured, with a long aftertaste. In the later phase, notes of red fruits are added, which harmonize very well with the aromas of the oak barrel aging and are perceived in a long aftertaste.
  • Recommended serving temperature: 16° to 18° C.

The three grape varieties are harvested by hand at the best time of ripeness. In the cellar, they are gently pressed separately and macerated with the berry skins for a week at 5°C. The subsequent fermentation takes place at a controlled temperature of 25 ° C.

The young wine does not mature for a few months in new barriques, but in barriques that have already been used for aging other wines for 2-3 years. This measure limits the influence of the toasted wood on the biodynamic red wine and emphasizes the fruity aromas.

The Garnacha grapes with very small percentages of other varieties are harvested by hand and pressed with gravity. The fermentation of the mash at 20°C takes 2 weeks. During this process, the mash is pumped around daily so that the berry skins floating on the liquid are always wet and the colors and flavors contained in them can be extracted. After that, this biodynamic wine matures for a short time in French oak barrels that have already been used 1-2 times for other wines. The aim is to preserve characteristic fruity notes and give it only delicate and attractive nuances of oak barrel aging.

Organic wine - profile

  • Color: straw yellow with a greenish, brilliant, clear sheen
  • Nose: easily accessible, open aromatic scents of white fruits (peach, pear, apple) with a hint of fresh hay and ripe grapes based on a mineral base.
  • Mouth: Its fresh style is just as positively noticeable as its perfectly balanced fruity aromas that make the mouth watery just by smelling it. Its long-lasting taste is characterized by the fresh and invigorating aromas of young apples, citrus fruits and white peaches. A high proportion of dry extract and the naturally present soft tartaric acid, as well as the maturation on the yeast with carried out stirring (batonnage) result in a really dry, seductively pure organic wine with a smooth and harmonious texture. In addition, it is neither too aromatic nor excessively structured and thus it enters into a "love marriage" with everything the sea offers us in the way of fish and crustaceans.
  • Drinking recommendation: In the Rias Baixas wine region, where the Albariño vines thrive near the sea, an organic wine is produced that goes well with fish dishes, bowls and crustaceans like no other! Serve it at approx. 10 ° C within 5 years of the vintage.

 

Organic wine - processing, Bodegas Corisca, Rias Baixas Albariño

Each individual grape is harvested by hand and, at the same time, tested for quality and integrity, put in small plastic crates in which they are taken to the wine cellar for further processing. Here the berries are carefully separated from the panicles and stalks. Before pressing the berries, they are subjected to a maceration of 6 hours under a carbonic acid atmosphere, and then very gently pressed. The grape juice then rests for 48 hours at a low temperature of 13° C. The actual fermentation takes place in stainless steel tanks at 16 to 20° C. The maturation of the wine on its fine yeast takes 3 months. During this time a batonnage (stirring) takes place on a 2-day rhythm. For the clarification and filtration of the wine, bentonite (rock flour) but no protein of animal origin is used. Thus this organic white wine of Bodegas Corisca ;suitable for vegans.

The grapes come from a vineyard in the province of Toledo. The vines stand alone like bushes and are spread widely throughout the vineyard. They can only be picked by hand. The soil is not very fertile, covered with gravel and can actually only be used for viticulture. Here too, the grapes are collected in small boxes and carefully checked in the winery and sorted out if necessary.

The mash and spontaneous fermentation take 20 days. After malolactic fermentation, the wine matures for 8 months in French oak barrels and then another 8 months in the bottle before it is released from the Bodega Sotero Pintado.

The grapes come from root real vines that were planted after the onset of the phylloxera plague and, miraculously, did not come from it like almost all vines in Europe were destroyed. Some of them are now as thick as tree trunks. On the stony soil in the El Labajo vineyard, they stand in bushes far apart from each other and drive their roots deep into the soil, where they can still absorb moisture and dissolved minerals despite the dry and hot climate.

These high-quality grapes are harvested by hand, transported to the winery in 15 kg boxes and carefully processed before mashing and fermentation controlled and selected. Fermentation occurs spontaneously with the grapes' own yeasts and takes about 20 days. The wine then matures for 8 months in French barriques and at least another 8 months in the bottle before it is allowed to leave the Bodega Sotero Pintado.

An older vineyard with unrooted vines that were planted before and during the phylloxera plague (Philoxera) will hardly be found anywhere else in Europe. Phylloxera, which was introduced from America, destroyed almost all European vines by eating their roots. Since then, European vine branches have been grafted onto American vine roots that are resistant to phylloxera. In this way, European viticulture was revived from the 20th century onwards. This process could be described as the first successful biological plant protection measure.

Paraje (the place, vineyard) called Dondellas is a unique vineyard in the foothills of the Sierra de Gredos, between El Barraco and the Bourguillo reservoir. It is located at an altitude of 850 m and was planted with vines in 1943. Although they only produce a small harvest of grapes, they are of excellent quality, which is impressive in the red organic wine Sotero Pintado Paraje Dondellas.

It's actually nothing new that good grapes are needed to make good wines. Nevertheless, it often happens that good agronomists do everything in the vineyard to produce good grapes, which is why they work hard for almost a whole year, but then mistakes happen during winemaking that a sensitive and experienced oenologist cannot make. Sotero Pintado, a small, young winemaker who grew up with vines and wine and who has full training as a winemaker, can avoid them.

And this is how Sotero Pintado goes about making this wine:
The grapes are harvested manually and brought to the winery for further processing in small boxes so that the grapes are not crushed and do not oxidize. 30% of the grapes go into the mash as whole bunches, including their panicles, and 70% of the grapes are freed from them, so that only the berries macerate in the mash and begin to ferment spontaneously with the grape's own yeasts in a concrete tank at a controlled temperature. At higher fermentation temperatures, the fine fruity aromas of the grapes would be lost. After alcoholic fermentation is complete, the wine is racked, which means it is transferred to another tank, leaving the solids behind. Malolactic fermentation begins in the new tank at a slightly higher temperature, during which the malic acid contained in the wine is converted into lactic acid. Now the wine needs rest to mature so that its original fruity aromas can fully develop and ripening aromas are added through contact with lightly toasted French oak barrels. Sotero Pintado uses 500 liter barrels because the smaller contact surface means they have less of an impact on the wine than barriques with a capacity of 225 liters.

Organic wine production Sotero Pintado Malvasia sobre Lias, IGP Castilla y Leon

The grapes for this white wine come from two vineyards in Benegiles and El Maderal. This region is called “Tierra del Vino” and is located on both banks of the Duero River, which flows through the province of Zamora. It is accompanied from north to south by the Roman Vía de la Plata. One of these vineyards is 120 years old and the other is 90 years old.

The grapes are harvested by hand early in the morning while the temperatures are still low and immediately placed in 15 kg boxes brought to the basement. This prevents premature oxidation of the berries. Before the grapes go into the press, they are checked again on a sorting table and less good grapes are sorted out.

The pressing of the grapes is slow and gentle in order to extract the bitter substances found in the berry skins and seeds avoid. The grape juice then rests for 24 hours at a temperature of 11° C, during which pre-clarification takes place. This must is then filled into French oak barrels to ferment at a controlled temperature.

After fermentation, the wine remains in the same barrel with its fine lees for 10 months, where, depending on taste, a battonage ( The wine is mixed with the yeast. The wine then ages in the bottles for at least four months before it is allowed to leave the Bodega Sortero Pintado.

The Sotero Pintado Clarete sobre Lias is a wine like the one my grandfather Aurelio once made, says his grandson Sotero . The grapes come from one vineyard, red and white, which were grown together, ripened, harvested and pressed at the same time.
The word Clarete has its origins in Bordeaux when the influence of England was great there and very light wines were called "Claret".

Organic winemaking Sotero Pintado Clarete sobre Lias, IGP Castilla y Leon

60 years ago, when the plot from which the grapes for this wine came, it was not uncommon to have white wine and red grape varieties that had the same ripeness were planted next to each other. In this case it was the varieties Garnacha, Garnacha gris, Tempranillo and Viura.

They were harvested by hand in the early morning at a still low temperature, transported to the winery in 15 kg boxes and stored checked again on a sorting table and, if necessary, the less good grapes and berries are sorted out. This is the only way to protect the grapes from oxidation and to produce pure wines in terms of smell and taste.

The grapes are pressed very slowly, whereby the skins of the red berries release some of their red dye and combine with the white juice mixed. This juice then rests for 24 hours at a cool 11° C, during which the juice clears itself as the solid components settle out and are left behind when the must is decanted.

Fermentation of this clean must takes place in new French oak barrels at a controlled temperature.

After fermentation, the wine remains in the same barrel with its lees for 10 months, depending on its taste the yeast is mixed. After a rest period of 4 months in the bottle, the wine refines and reaches its initial drinking maturity.

Organic wine production Pago Finca Élez, Flor de Sabina, Chardonnay

The Flor de Sabina wine comes from vineyards at more than 1,000 m altitude with an extreme continental climate with very hot summers and large temperature differences between day and night, as well as very cold winters . The soils are barren, stony with sedimentary rocks made of limestone and clay. These conditions favor organic viticulture, which has been practiced at Pago Finca Élez since 2011.

The grapes are harvested manually, the harvest quantity is less than 7,000 kg/hectare.

The actual winemaking begins with a 12-hour cold maceration of the grapes at 12-16° and the subsequent alcoholic fermentation at a temperature of 15 to 17° C. The The wine ages on the lees for 4 months.

The climatic conditions for the 2021 vintage will be remembered for a long time with heavy snowfall and extreme cold in winter. Even in the spring, temperatures remained slightly cooler than usual, although precipitation remained at usual levels throughout the cycle.
