After more than 35 years of organic cultivation, no residues from previous "sins" (pesticides) can be found in the soil. In addition, the vineyards are surrounded by forest and protected from outside influences. As a result, pesticides cannot get directly into or onto the vines either via the roots or the air. This is a clear advantage over vineyards that have recently been converted to organic viticulture or that have been contaminated by neighbors spraying chemicals. The actual winemaking begins with the grape harvest, which is carried out manually or mechanically, depending on the location of the vineyards. After a relatively short maceration, the Sangiovese grapes produce a fruity red organic wine with few tannins. It is therefore ready to drink early and can be stored for less long.
The 6-month aging in large oak barrels refines this Chianti without suppressing the fruity aromas of the Sangiovese grapes.

The Tenuta San Vito Poggio Alto is a magical and promising cuvée made from four Tuscan grape varieties that were harvested separately by hand, fermented separately and matured in barriques. The designation as IGT wine, i.e. country wine, is nothing derogatory in this case, but rather it indicates that two of the grape varieties used are real Tuscans, but are not approved for Chianti wine.

The vineyards that provide the grapes for this wine have been organically farmed without chemicals for more than 35 years. You are surrounded by forest and there are no direct neighbors who could disturb the idyllic location of Tenuta San Vito.

The actual winemaking begins with the grape harvest, which is carried out manually or mechanically, depending on the location of the vineyards and the degree of ripeness of the various grape varieties. Mash fermentation lasts 10 to 15 days, during which the mash is pumped over several times a day. The red organic wine then matures for at least 12 months in Allier oak barrels and for several months in bottles before it is sold for the first time.

The Ciliegiolo - the small cherry is a grape variety with round berries of a dark red-blue color, which despite its very thick berry skin is susceptible to fungal diseases and therefore needs a dry climate. Perhaps that is the reason why their distribution is limited despite good wine quality.

At the Torre alle Tolfe winery it grows on sandy soil on a slope with a south-westerly and east-facing orientation and a planting density of 5,000 vines / hectare.

The grapes are harvested manually and selected at the same time. The must fermentation begins spontaneously with the yeasts naturally present on the berries in a concrete tank and lasts 30 days. Then the wine matures in large oak barrels.

Single-variety Canaiolo wines are a rarity. A very good one from this grape variety is the Torre alle Tolfe Canaiolo, Tuscany IGT, which did not mature in wooden barrels and can thus present its original, fruity aromas in a velvety soft way.

Organic wine processing, Torre alle Tolfe, Canaiolo Tuscany IGT

Canaiolo is one of the grape varieties allowed to be used in small quantities for the production of Chianti. The dark grapes ripen late, the resulting wines are very color-intensive, with a full body and a velvety taste. Their disadvantage is the low yield, which is why a higher price for Canaiolo wine is to be expected. Presumably that is why it is planted. On wineries where it still exists, it is only used as a cuvée to help improve a wine with color, body and taste.

At Torre alle one wants to preserve the typical Tuscan variety due to its positive properties and to prove it with the varietal expansion. It grows on sandy soil, 5,000 vines are planted there per hectare. Like all grapes from the winery, they are hand-picked, spontaneously fermented with the grape's own yeast in a concrete vat for 30 days and then matured. As a result, their attractive, fruity aromas are preserved unadulterated.
It is used almost exclusively as a blending partner for the Sangiovese.

The label of this wine shows one of the most famous works by the painter Ambrogio Lorenzetti from Siena from 1343, which contrasts the effects of good and bad government. On the right side of the picture you can see a tower, which from its location should be the tower of le Tolfe, with vineyards next to it.

Syrah vines were originally at home in the northern Rhône, today you can find them wherever the climate is hot and dry. Why not in Tuscany too, where Gabriele Buodonno planted 2,500 vines on half a hectare in 1992. Today they are of a good age and produce delicious grapes and the wonderful Buondonno Syrah Campo ai Ciliegi.

The grapes come from a small, half a hectare large vineyard called Campo ai Ciliegi (cherry field), which was planted with 2,500 Syrah vines in 1992. They are harvested by hand from mid-September. Maceration and fermentation with the grape's own yeast takes 15 to 20 days. The malolactic fermentation and aging in barriques and tonneau took almost a year.
This red organic wine is only lightly filtered before it is bottled.

The Sangiovese vines grow in the Casavecchia, Sicelle and Sicellino vineyards, on clay and calcareous soil with stony-rocky subsoil and south, east, north-east, east and north-west.

The average planting density of 4,800 vines / hectare and the low harvest of approx. 40 hl / ha allow the harvest of high-quality grapes that are harvested by hand.

The actual winemaking begins with the fermentation of the mash with the yeast naturally present on the grapes in stainless steel and concrete vats. It lasts at least 20 days. During this time, the mash is regularly pumped over and the pomace cap (consisting of the berry caps and the kernels) is pressed into the mash in order to be able to extract all the flavoring and coloring substances it contains.

The wine matures in small and medium-sized oak barrels and takes about a year, during which the malolactic fermentation also takes place. Then the contents of the individual barrels are combined in large concrete tanks to form a cuvée and bottled. The Chianti Classico matures there for another 3 months before it is allowed to leave the winery for the first time.

This Buondonno Chianti Classico Riserva is only produced in the best years. The best, carefully selected Sangiovese grapes from the oldest vineyards "Casavecchia" and the Sicellino planted in the 1970s are used. The soil there is very stony and the harvest is very small.

The best Sangiovese grapes come from the Casavecchia and Sicellino vineyards. They are located at 430 m above sea level on a slope facing south and north-east. The soils there are clayey and calcareous with a stony subsoil. The planting density averages 4,000 vines / hectare, the harvest is correspondingly low, but the quality of the grapes is all the better.

The fermentation of the mash starts spontaneously with the grape's own yeasts in a concrete tank and lasts at least 4 weeks. The maturation and refinement of the wine including the malolactic fermentation takes place in 500 liter oak barrels (22 months) and in 2,500 liter oak barrels (24 months). After filling into bottles, the wine rests for another five months in the winery before it is offered for sale.

The average planting density of 4,800 vines / hectare and the low harvest of approx. 40 hl / ha allow the harvest of high-quality grapes that are harvested by hand.

The actual winemaking begins with the fermentation of the mash with the yeast naturally present on the grapes in stainless steel and concrete vats. It lasts at least 20 days. During this time, the mash is regularly pumped over and the pomace cap (consisting of the berry caps and the kernels) is pressed into the mash in order to be able to extract all the flavoring and coloring substances it contains.

The wine matures in small and medium-sized oak barrels and takes about a year, during which the malolactic fermentation also takes place. Then the contents of the individual barrels are combined in large concrete tanks to form a cuvée and then bottled. The Chianti Classico matures there for another 3 months before it is allowed to leave the winery for the first time.

As the name Colorino suggests, it can be used to produce very colorful wines which, as is the case with the Torre alle Tolfe Colorino from Tuscany, also produce very pleasantly aromatic and velvety soft wines.

Organic wine - processing, Torre alle Tolfe, Canaiolo, Tuscany IGT

The manual grape harvest is standard in the vineyards of Torre alle Tolfe and a prerequisite for being able to produce true, clean, i.e. pure wines. This method avoids healthy, perfectly ripe grapes from coming into contact with unripe, overripe, rotten or mold-infested grapes, as can be the case with mechanical harvesting. However, this way of working is much more expensive and has an impact not only on the price, but above all on the quality.

The Colorino vines thrive on sandy vineyard soil that is oriented to the southwest. The grapes are fermented in a mash tank with the naturally present yeast for a period of 20 days. The maturation takes place in large oak barrels. The contact area between wood and wine is smaller and less intense than in small barriques. As a result, the aromas of the wine are less woody.

The Buondonno Rosato Toscano is created from the blend of white vinified Syrah grape must with a very short resting time on the skins, the must being obtained from the Sangiovese vein for the production of Chianti Classico.

The processing takes place in such a way that the freshness and fruit are largely retained.
