Refosco del Peduncoloi is a regional grape variety in Friuli and in the eastern part of Veneto. This La Baratta Refosco  is impressive to the eye with its intense ruby red color with violet nuances, but also with beautiful aromas and fruity-spicy taste.

This La Baratta TAI, is a white wine made the regional grape Tocai Friulano that provide a simple, but good, light white organic wine that is unadulterated to drink with large groups of friends or small celebrations.

Wines made from the Tocai Friulano grape variety should not be confused with a Hungarian Tokaj. It is an autochthonous grape variety in Friuli, as well as in eastern Veneto. It was simply called Tocai there and according to EU rules its name is only Friulano today.

Organic wine - processing, Evaristiano, Cannonau di Sardegna DOC, Aristo

This red organic wine from the Cannonau grape variety (related to the Grenache) has been grown in Sardinia for centuries. In the Evaristiano winery, the vines thrive on loamy soil in close proximity to the Mediterranean, where the wind from different directions helps to protect the grapes from fungal attack. With this location of the vineyards are also the clear temperature differences between day and night, which contribute to the development of pronounced fruity aromas in the grapes. The grapes are harvested by hand from late September to early October. The maceration in stainless steel tanks with the grapes' own yeasts lasts 10 days, with the mash being pumped around daily so that the berries floating on the liquid are always moist and the colors and flavors contained therein can be extracted. Vermentino vines have been native to sardine since Roman times and were able to adapt to the climate in the best possible way. The Cantina Evaristiano vineyard covers 2 hectares and is only 2 km from the center. The soil contains limestone and marl on a hill that slopes towards the sun in a southern direction. The vines are planted at a distance of 0.80 x 2.5 m. The grapes are harvested by hand in the first weeks of September. The Chardonnay grapes come from the Nicole vineyard, planted with Chardonnay vines from 10 to 12 years old. The harvest of manually harvested and sorted grapes is 100 Quintali, an Italian unit of weight equal to 50 kg. That's a lot from which you can produce good to very good wines. Larger harvests are always at the expense of quality.

The grapes are pressed immediately after harvest and the juice is spontaneously fermented in stainless steel tanks at a cool temperature. As with white wine, a nitrogen atmosphere is also used here in order to avoid contact between the grapes, juice and wine on the one hand and oxygen on the other. During this fermentation, the sugar present in the grapes is converted into alcohol and carbonic acid. Since this carbonic acid escapes, a second fermentation follows in a closed pressure tank, for which some sugar and yeast are added to the clarified wine, from which the desired carbonic acid is then produced, which remains in the wine.

A good organic wine made from grapes from the vineyards of Fattoria degli Orsi is the basis for this very tasty balsamic vinegar. Equally important is the duration of its maturation in barrels in which it loses part of its volume through evaporation, but gains a variety of flavors. It is a real and pure Balsamcio di Modena, so from the region of origin and a recipe that has been maintained for centuries. This means that no chemicals, dyes or preservatives were used either in the vineyard or in its actual production. During his 5 years of aging oak barrels, he lost part of its volume through evaporation, but added a variety of flavors that contribute to its mild and distinctive flavor.
