Organic wine - processing, Solà Classic, Vermell, Mas Hereu, Priorat DOQ, red, 2017

This wine is made from Grenache & Carignan grapes from 60 year old vines. They ripen at different times and are each harvested by hand when they are optimally ripened and checked and sorted again in the cellar for their perfect quality. Alcoholic fermentation with indigenous yeasts takes place in stainless steel tanks at 28 ° C and lasts 30 to 35 days. The wine then matures several month in large casks and then 3 years in bottles before they can leave the winery.

The grape varieties 35% Garnacha, 15% Carinena, 25% Merlot and 25% Cabernet Sauvignon grow in five different plots of the winery that are best suited for each variety based on their soil type.
The harvest quantity per vine is extremely low at 0.5 kg. The grapes are harvested by hand, strictly selected and transported to the winery in 15 kg containers.
Each grape variety is processed separately there. First, the grapes are lightly crushed, which releases some juice, which together with the berry skins results in the mash, which macerates at 28° C and then ferments at 22°. The pomace is then separated from the wine and stored in new barriques (90% French and 10% American) for 12 months, but this noble organic wine is only allowed to leave Clos Galena after another 24 months of aging in the bottle.

The three grape varieties Garnacha, Carinena and Syrah grow in five different plots of the winery that are best suited for the respective variety due to their soil type.
The harvest quantity per vine is extremely low at 0.5 kg. The grapes are harvested and selected by hand and transported to the winery in 15 kg containers.
Each grape variety is processed separately there. First the grapes are lightly crushed, which releases some juice which, together with the skins of the berries, gives rise to the mash, which macerates at 28°C and then ferments at 22°C for seven days. The pomace is then separated from the wine and stored in new barriques (80% French and 20% American) for 8 months.
The cuvée is then created by merging the separately developed organic wines.

The Garnacha grapes with very small percentages of other varieties are harvested by hand and pressed with gravity. The fermentation of the mash at 20°C takes 2 weeks. During this process, the mash is pumped around daily so that the berry skins floating on the liquid are always wet and the colors and flavors contained in them can be extracted. After that, this biodynamic wine matures for a short time in French oak barrels that have already been used 1-2 times for other wines. The aim is to preserve characteristic fruity notes and give it only delicate and attractive nuances of oak barrel aging.

  • Color: straw yellow with a greenish, brilliant, clear sheen
  • Nose: easily accessible, open aromatic scents of white fruits (peach, pear, apple) with a hint of fresh hay and ripe grapes based on a mineral base.
  • Mouth: Its fresh style is just as positively noticeable as its perfectly balanced fruity aromas that make the mouth watery just by smelling it. Its long-lasting taste is characterized by the fresh and invigorating aromas of young apples, citrus fruits and white peaches. A high proportion of dry extract and the naturally present soft tartaric acid, as well as the maturation on the yeast with carried out stirring (batonnage) result in a really dry, seductively pure organic wine with a smooth and harmonious texture. In addition, it is neither too aromatic nor excessively structured and thus it enters into a "love marriage" with everything the sea offers us in the way of fish and crustaceans.
  • Drinking recommendation: In the Rias Baixas wine region, where the Albariño vines thrive near the sea, an organic wine is produced that goes well with fish dishes, bowls and crustaceans like no other! Serve it at approx. 10 ° C within 5 years of the vintage.

 

Organic wine - processing, Bodegas Corisca, Rias Baixas Albariño

Each individual grape is harvested by hand and, at the same time, tested for quality and integrity, put in small plastic crates in which they are taken to the wine cellar for further processing. Here the berries are carefully separated from the panicles and stalks. Before pressing the berries, they are subjected to a maceration of 6 hours under a carbonic acid atmosphere, and then very gently pressed. The grape juice then rests for 48 hours at a low temperature of 13° C. The actual fermentation takes place in stainless steel tanks at 16 to 20° C. The maturation of the wine on its fine yeast takes 3 months. During this time a batonnage (stirring) takes place on a 2-day rhythm. For the clarification and filtration of the wine, bentonite (rock flour) but no protein of animal origin is used. Thus this organic white wine of Bodegas Corisca ;suitable for vegans.

  • Nose: The aroma of the Bavoc``on is very balanced between red and black fruit aromas and the notes from maturation in barrels with vanilla , licorice and toasted wood.

The grapes come from a vineyard in the province of Toledo. The vines stand alone like bushes and are spread widely throughout the vineyard. They can only be picked by hand. The soil is not very fertile, covered with gravel and can actually only be used for viticulture. Here too, the grapes are collected in small boxes and carefully checked in the winery and sorted out if necessary.

The mash and spontaneous fermentation take 20 days. After malolactic fermentation, the wine matures for 8 months in French oak barrels and then another 8 months in the bottle before it is released from the Bodega Sotero Pintado.

Organic wine - profile

  • Colour: shiny, intense cherry red
  • Nose: The scent is opulent and intensely characterized by ripe, red and black wild berries, notes of violets surrounded by the sweet ripe aromas such as Vanilla, licorice and leather that come from the French barriques.
  • Mouth: gentle on the palate, almost sweet although its residual sugar content is very low, it fills the mouth with diverse and refined aromas and taste variations . The silky-smooth tannins and the delicate acidity caress the palate until an endlessly long finish.
  • Drinking recommendation: at 16 to 18° C you can of course enjoy it with tasty dishes or just concentrate on wine and retreat into a quiet corner.

The grapes come from root real vines that were planted after the onset of the phylloxera plague and, miraculously, did not come from it like almost all vines in Europe were destroyed. Some of them are now as thick as tree trunks. On the stony soil in the El Labajo vineyard, they stand in bushes far apart from each other and drive their roots deep into the soil, where they can still absorb moisture and dissolved minerals despite the dry and hot climate.

These high-quality grapes are harvested by hand, transported to the winery in 15 kg boxes and carefully processed before mashing and fermentation controlled and selected. Fermentation occurs spontaneously with the grapes' own yeasts and takes about 20 days. The wine then matures for 8 months in French barriques and at least another 8 months in the bottle before it is allowed to leave the Bodega Sotero Pintado.

An older vineyard with unrooted vines that were planted before and during the phylloxera plague (Philoxera) will hardly be found anywhere else in Europe. Phylloxera, which was introduced from America, destroyed almost all European vines by eating their roots. Since then, European vine branches have been grafted onto American vine roots that are resistant to phylloxera. In this way, European viticulture was revived from the 20th century onwards. This process could be described as the first successful biological plant protection measure.

It is often assumed that the original, i.e. unrooted, vines would produce better wines. With the wine Sotero Pintado Prephiloxeric "La Reguilona" you have the opportunity to convince yourself of this.

 

Organic wine - profile

  • Color: deep, glass-coloring, dark red
  • Nose: Generously opening scents of dark and red wild berries, dark ripe cherries, diverse but less prominent notes of flint, sweet Spices such as licorice, vanilla, noble traces of lightly toasted oak.
  • Mouth: powerful, concentrated aromas, initially fruity, then you feel the perfect balance between alcohol, acidity and fine, velvety tannins. These are the characteristics of a fine, elegant wine with an incredible length in the aftertaste.

On the stony soil in the La Reguilioma vineyard, they stand far apart in a bush shape and drive their roots deep into the soil, where they can still absorb moisture and dissolved minerals despite the dry and hot climate.

These high-quality grapes are harvested by hand, transported to the winery in 15 kg boxes and carefully processed before mashing and fermentation controlled and selected. Fermentation takes place spontaneously with the grapes' own yeasts in 500 liter French oak barrels and takes approximately 25 days. The wine then matures for 12 months in 500 l barrels, which leave the wine with its fruity components and give it less woody and smokey aromas. After being bottled, this wine matures in bottles for a further 12 months before it is allowed to leave the Bodega Sotero Pintado .
