This rosé wine is made with as little intervention as possible.
The grapes are harvested mechanically. The berries then macerate with the grape juice overnight at a cool temperature. During this time, part of the coloring and very little tannin are released from the berry skins. Fermentation then begins spontaneously with the natural yeasts.

The Sotero Pintado Clarete sobre Lias is a wine like the one my grandfather Aurelio once made, says his grandson Sotero . The grapes come from one vineyard, red and white, which were grown together, ripened, harvested and pressed at the same time.
The word Clarete has its origins in Bordeaux when the influence of England was great there and very light wines were called "Claret".

 

Organic wine profile

Organic winemaking Sotero Pintado Clarete sobre Lias, IGP Castilla y Leon

60 years ago, when the plot from which the grapes for this wine came, it was not uncommon to have white wine and red grape varieties that had the same ripeness were planted next to each other. In this case it was the varieties Garnacha, Garnacha gris, Tempranillo and Viura.

They were harvested by hand in the early morning at a still low temperature, transported to the winery in 15 kg boxes and stored checked again on a sorting table and, if necessary, the less good grapes and berries are sorted out. This is the only way to protect the grapes from oxidation and to produce pure wines in terms of smell and taste.

The grapes are pressed very slowly, whereby the skins of the red berries release some of their red dye and combine with the white juice mixed. This juice then rests for 24 hours at a cool 11° C, during which the juice clears itself as the solid components settle out and are left behind when the must is decanted.

Fermentation of this clean must takes place in new French oak barrels at a controlled temperature.

After fermentation, the wine remains in the same barrel with its lees for 10 months, depending on its taste the yeast is mixed. After a rest period of 4 months in the bottle, the wine refines and reaches its initial drinking maturity.

The grapes from vines over 40 years old in the highest vineyard are harvested by hand in the first days of September and pressed as a whole bunch. Only the first, weakly colored juice is fermented at a cool temperature for this rosé wine. deliver grapes of excellent quality and expressiveness. The very low fermentation temperature and the long fermentation time are an indication that great importance is placed on preserving all the aromas of the grapes and the freshness of this organic rosé wine. It is up to the winemaker's discretion as to when the juice/must is drained from the berry skins and how much color the wine should contain. Only then does alcoholic fermentation take place, which transforms the must into wine.

The Guts-Weine (estate wines) are intended as the winery's basic wines, which should be easy to access and still provide fun, joy and enjoyment. This rosé organic wine from ÖKO Weingut Zang "Erdung" was made from 100% Pinot Noir grapes.

 

Organic wine profile

  • Color: light salmon color with pink and copper reflections.
  • Nose: The nose has nuances of fresh apples and citrus fruits paired with hints of fine flowers, red berries and a hint of Mediterranean herbs.
  • Mouth: The wine hits the palate and tongue in a stimulating way and spreads delicately throughout the entire mouth. A well-integrated astringency makes the maceration time noticeable, to which the wine also owes its beautiful color. The acidity, which is refreshing at the same time, revives and leaves traces of fruity-tart raspberries, wet stones in salty sea air and beguiling violet flowers on the palate. He mentally takes us with him to the south - Bon Voyage!
  • Drinking recommendation: Serve at around 7°C.

 

Organic wine production, Oeko-Wein-Gut Zang "Erdung" Guts-Wein QbA, rosé

All grapes are harvested by hand and spontaneously fermented with the grapes' own yeasts. Only in exceptional cases, such as when a period of bad weather is approaching, are the grapes for this wine harvested by machine in order to avoid losing the grapes due to rot. With the exception of some SO2, no preservatives or fining agents are used.

The Pinot Noir grapes are harvested when fully ripe and then spend 6 hours, lightly crushed, in the mash. During this time, the dyes are released from the berry skins.
