It takes you to the vineyard called "broken stones" (Pierres Cassées) - in which old vines are rooted deep in stony, mineral-rich soil. From here comes the mineral notes, which are complemented by a rich and complex bouquet of black currants, blackberries and nuances of vanilla, spices and delicate notes of oak barrels in which this wine lingers for some time.

Organic wine - preparation, Domaine de la Vallongue, Les Baux de Provence, AOP, Pierre Cassées, red

Since the Grenache grapes ripen earlier than the Syrah grapes, the start of the harvest for each variety is given only when they are optimally ripe. The grapes are harvested by hand and brought in small containers for wine production in the nearby winery. Here, the stems and panicles are separated from the berries first. This is followed by 3 to 4 weeks fermentation of the mash in stainless steel tanks. Then the wine is separated from the pomace (berry skins and kernels). Soon after, malolactic fermentation begins, converting the malic acid into lactic acid. This is a mandatory process for red wines, which makes them appear rounder and fuller in flavor. The aging of the young wine (75%) is also done in stainless steel tanks and only (25%) in 225 l oak barrels. During this ripening period, the wines refine themselves, without assuming an excess of woody flavors, but gaining in complexity.

With the quality level "Garrigues" - whether white wine, rosé or red - the quantity harvested in good normal years is limited to 40 hl per hectare by an appropriate size. In 2022 also a long period of drought and great heat ensured an exceptionally small crop of only 13 hl / ha. A quantity that falls below the cost of production.

Each of the three grape varieties is harvested separately due to the different ripening times. Then, the grapes are gently pressed and macerated for one hour with the skins at low temperature, with a preliminary clarification in progress. The following alcoholic fermentation is carried out at a temperature of 15-17 ° C to preserve the fresh and fruity aromas. The young wine is put back in stainless steel tanks until the bottles are filled in spring.

In a small harvest of only 40 hl / ha, the content of vitamins and minerals in the grapes is much higher than for larger harvest volumes as it is allowed and achieved for example in Germany of an average with approximately 100 hl/ha. Consequently wines are tastier and more valuable at lower yields.

At the quality level "Garrigues" - be it the white wine, the rose or this red, the crop is limited by appropriate pruning to 40 hl per hectare. By comparison, German winegrowers are allowed to harvest up to 100 hl / hectare for so-called quality wines (QbA). Of course, there are also in Germany winemakers who strive for better quality and limit the harvest quantities as well. The different grape varieties are not harvested at the same time due to the different maturity. The maceration / fermentation lasts 3 to 4 weeks each. Only after the fermentation has been completed are the wines of the individual grape varieties combined, depending on their quality, into a harmonious blend and matured in stainless steel tanks.

It is said that biodynamically produced wines have a certain something that other wines lack. It's hard to describe, perhaps it's the complexity and harmony of the Domaine la Marseillaise IGP de Var Merveillement wine that exemplifies it? Judge for yourself, we are curious about your opinion.

Speaking of IGP or country wine: Why is this wine "only" a country wine? Not because it is less good than an AOC (quality wine), but because the Viognier grape variety was also used, which is not permitted for an AOC wine from the Côtes de Provence appellation and is therefore not typical. However, this does not detract from the quality of this biodynamic wine!

Biodynamic wine - Elaboration, Domaine la Marseillaise, IGP du Var, Merveillement, blanc

The vineyard soil, which contains clay and sand, and the vines growing on it are cultivated and cared for with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 20 years old (Ugni Blanc) and 5 years old (Vermentino and Viognier). The grape harvest, an average of 50 hectoliters per hectare, is carried out by hand and brought to the winery in 20 kg containers, where they are immediately destemmed, lightly crushed and macerated for a short time in contact with the skins of the grapes. The fermentation starts spontaneously with the grapes own yeasts. It lasts 4 weeks at a fermentation temperature of 18 to 20°C. This biodynamic white wine then matures for 3 months in stainless steel tanks on its fine lees, which is stirred regularly. It is not clarified with agents containing protein, but only lightly filtered before bottling.

Biodynamic wine preparation Domaine la Marseillaise, Côtes de Provence, rosé

The loamy vineyard soil and the vines growing on it are processed and maintained with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 18 years old (Syrah and Grenache). They are harvested by hand and brought to the winery in 20 kg containers, where they are freed of stems and panicles, lightly squeezed in a grape mill and immediately pressed. The fermentation starts spontaneously with the grapes' own yeast at a temperature of 18-20 ° C and lasts about 4 weeks. No filter aids, i.e. no proteins of plant or animal origin, are used for the light filtering of the wine.

The organic wine Domaine les Patys Ventoux AOC Racines du Ciel rouge,(Roots of Heaven) thrives at the foot of Mont Ventoux east of the Rhône in a typically Mediterranean climate, where organic viticulture is somewhat easier above the 47th parallel. Correspondingly full-bodied, dry and fruity are the wines of these small family wineries in Bédoin.

The Mediterranean vines grow in vineyards on a slight slope and south-facing on clay and limestone soils covered with pebbles and weathered scree from Mont Ventoux. The grapes are picked by hand.
