You know that the juice of the Pinot Noir grapes is colorless rather than light. That's why the grape berries are first separated from the panicles and lightly squeezed so that their juice can flow out. Both berry skins and grape juice make up the mash; it is only when they are together for a few hours at a cool temperature that the dyes are released from the berry skins and turn the must pink. It is up to the winemaker's discretion as to when the juice/must is drained from the berry skins and how much color the wine should contain. Only then does alcoholic fermentation take place, which transforms the must into wine.

• Color: light yellow
• Nose: This Silvaner shows a refreshing bouquet of salty meadow herbs from the Bergalm, yellow Citrus fruits and juicy stewed fruits such as apples and pears with a hint of quince jelly.
• Mouth: A still youthful, firm acidity draws it over the tongue, to the The edges are tart with the invigorating astringency of the wooden barrel. This wine has draw and a lot of drinking flow. At the same time, the yellow fruity nuances come to the fore on the palate with an almost exotic, spicy fruit impression in the aftertaste.

Already in the barrel, we were impressed by this special Oekowein-Gut Zang "Spannung" Müller-Thurgau wine with its tight and spicy structure, which is completely different to what we are usually used to from the grape variety.

• Color: light yellow
• Nose: The nose is dominated by cool and nutmeg-spicy meadow herbs with tart hints of green apple, apple peel and citrus fruits.
• Mouth: On the tongue it comes across taut with invigorating acidity and then spreads out salty and matt with an ethereal fullness on the palate. It has a long, phenolically tart finish.
• Drinking recommendation:
• Serve at around 8°C. Ideal as an accompaniment to cold dishes and fish dishes from the pan.

The estate wines are intended as the winery's basic wines, which should be easy to access and still provide fun, joy and enjoyment. The name, OEKO-Weingut Zang “Resistance” says it all. The cuvée is made up of the fungus-resistant (PIWI for short) grape varieties Bronner and Johanniter. The vines are real fighters against mildew fungi in the vineyard and therefore need to be sprayed less.

• Color: light yellow
• Nose: Initially restrained Burgundian bouquet. There are spicy hints of meadow herbs, ripe apples and delicately exotic honeydew melon.
• Mouth: The tongue is dominated by smoky-spicy vegetal notes and a hint of exotic fruit impressions. Slightly astringent on the palate with grip and volume accompanied by a fine yellow-fruity aftertaste.
• Drinking recommendation: Serve at around 8°C. A universal white wine that goes well with many occasions and dishes.

• Color: light salmon color with pink and copper reflections.
• Nose: The nose has nuances of fresh apples and citrus fruits paired with hints of fine flowers, red berries and a hint of Mediterranean herbs.
• Mouth: The wine hits the palate and tongue in a stimulating way and spreads delicately throughout the entire mouth. A well-integrated astringency makes the maceration time noticeable, to which the wine also owes its beautiful color. The acidity, which is refreshing at the same time, revives and leaves traces of fruity-tart raspberries, wet stones in salty sea air and beguiling violet flowers on the palate. He mentally takes us with him to the south - Bon Voyage!

The Pinot Noir grapes are harvested when fully ripe and then spend 6 hours, lightly crushed, in the mash. During this time, the dyes are released from the berry skins.

• Nez : The nose shows hints of apricot, elderflower and cassis paired with floral notes of roses and meadow herbs as well as a salty, cool feel of the soil.
• Bouche : On the palate, initially vegetal freshness and agile acidity. The fruit nuances of currants and yellow orchards as well as the floral impressions also come through clearly here. A lot of attention and time was devoted to the red organic wine from the Oeko Weingut Zang "Erdung", Regent, both in the vineyard and in the cellar. The result is remarkable

• Color: Deep red-violet in color it radiates from the glass.
• Nose: The nose shows hints of apricot, elderflower and cassis paired with floral notes of roses and meadow herbs as well as a salty, cool feel of the soil.Rich bouquet of apricot, elderflower, cassis and juicy berries paired with floral notes of cherry blossoms, refreshing verbena and spicy meadow herbs with a salty note of the mineral-rich vineyard soil.
• Mouth: Flatteringly soft in the mouth, the texture is almost reminiscent of melting chocolate with subtle, bitter tannins. Impressions of cherries, blackberries and preserved wild strawberries also emerge on the palate, which slowly fade into a compact, grippy, earthy-spicy aftertaste.
      A real treat for the palate.

Like all red wines from the winery, this Regent was spontaneously fermented on the skins, but was pressed from the mash after just one week of fermentation in order to keep tannin extraction low and to preserve a fruity varietal character. This was followed by four years of maturation on the fine lees in stainless steel before this red organic wine was bottled in late summer 2023.

He focuses on the mineral origins of the vineyards around the wine-growing towns of Sommerach and Nordheim. The existing shell limestone soil from the Main loop runs through the wines like a cool stream bed. Like the Oeko-Weingut Zang Orts-Wein Silvaner, they are all consistent representatives of its organic philosophy and style: close to nature, unvarnished, honest and dry.

• Color: Pale yellow
• Nose: The soil is already in focus in the nose. A cool touch of shell limestone lies with hints of wet stone over smoky vegetal nuances of root vegetables and the fine, subtle fruit of pears and quince.
• Mouth: On the palate, the minerality of the soil can really be felt. A chalky grip on the tongue counteracts the otherwise round, creamy character of the long yeast base. There are also salty impressions of wild herbs and yellow stone fruit.
  A wine that literally conveys the atmosphere of the Nordheim vineyards: a tasteful panorama from the green Main meadows in the valley with the old orchards up to the barren vine slopes rich in shell limestone!
