The vineyards in the southern location consist of very fertile alluvial soils and in the north of predominantly loamy-silty soils. The vines growing on it are 30 years old.

The grapes are harvested by machine and sorted manually on a conveyor belt before winemaking begins. The mash ferments in temperature-controlled stainless steel tanks, after which the wine matures for 12 months, also in stainless steel tanks.

Organic wine - production Château La Bedouce, Bordeaux Supérieur, red

The grapes from around 20 years old vines grew on the best terroir (clay and limestone) in the Entre deuy Mers area, i.e. between the two rivers Garonne and Dordogne. The grape harvest is carried out mechanically (that explains the low price). Everything else follows the usual procedures in Bordeaux. The skins of the grapes are slightly damaged in a grape mill so that their juice can flow out. The berries and juice macerate together in it. The subsequent fermentation at a controlled temperature takes around 2 to 3 weeks depending on the grape variety. After fermentation ends, the wine is transferred to other tanks, separating the pomace from the wine. This process is repeated during the 24-month aging period until the wine is bottled completely clear and without sediment.

The skins of the grapes are slightly damaged in a grape mill so that their juice can flow out. The berries and juice macerate together in it. The subsequent fermentation at a controlled temperature takes around 2 to 3 weeks, depending on the grape variety. After fermentation is complete, the wine is transferred to other tanks and barriques, where the wine ages for up to 24 months.

Just like the Château Cafol, Castillon Côtes de Bordeaux you can get a good Bordeaux Introduce it in the old way. It was produced in the cellar in a very traditional way, but in the vineyard it was produced in a very progressive, organically controlled manner. It macerated in the mash for a long time and fermentation also proceeded slowly. A lot of color, flavor and tannin were removed from the skins of the berries, which were finally tamed during a long maturation in the barrique and in the bottle.

Organic wine production Chateau Cafol, Castillon, Côtes de Bordeaux AOC, red

70% Merlot and 30% Cabernet Franc and Cabernet Sauvignon is a typical cuvée for the nearby Castillon region from Pomerol and Saint Emilion. The grapes grew on 30-year-old vines on sandy, stony and partly loamy soils, which ensure finesse on the one hand and expressive wines on the other. The mash time and fermentation take approx. 5 weeks. This red organic wine then matured for 12 months in barriques and a few years in the bottle.

Organic wine - processing, Château Beau Rivage, Bordeaux Supérieur"Benjamin", red

Outstanding features are the double number of vines prescribed for Bordeaux Superieure wines and the low yields of only 25 hl / ha.

The 8 hectares of vineyards on former boggy and reclaimed flooring consisting of mud, silt, clay, loose rock (quartz, mica and feldspar) are planted with 6.600 vines/ha with an average age of 38 years (2012). Their yield is limited to 40 hl / hectare. The grape harvest was carried out by hand from October 3 to 17. Before performing the actual fermentation, the grapes were gently crushed and subjected to a cold maceration. Then started the 4-week alcoholic fermentation in large wooden vats. Then the wine is racked in barriques (new 40%) from the family's own production, where the organic wine undergoes the malolactic fermentation and a 15 months lasting maturation.
