The Sangiovese grapes for this Chianti Riserva come from a south-facing vineyard. The harvest time for Sangiovese begins at the end of September. During the manual harvest of the grapes, a particularly careful selection of the perfect grapes takes place. Fermentation begins spontaneously with the yeast on the grapes in a large concrete vat. It lasts 30 days at a maximum temperature of 30 ° C. The maturation of the wine, including malolactic fermentation, takes place in 1.000 liter casks made from chestnut wood.

Everything seems easy. The grapes thrive in the vineyard located in the southeast to southwest slope directly on the vineyard. They are harvested by hand and thereby selected and immediately brought to winemaking in the winery. The berries are freed from the panicles, lightly squeezed and fermented in the mash in concrete tanks and also the muturation took place in concrete tanks. Bottled war thsi wine about one year after the harvesting a little over a year after the grape harvest.

The bottle labels of the Chianti Colli Senesi represent Charlemagne, who asked his knight Tolfo de Gricci in 785 to build a defense tower in Siena. According to research in the Siena State Archives, the foundation stone for today's Torre alle Tolfe property was laid.

After more than 35 years of organic cultivation, no residues from previous "sins" (pesticides) can be found in the soil. In addition, the vineyards are surrounded by forest and largely protected from outside influences. As a result, pesticides can hardly get into the vineyards of Tenuta San Vito by direct drift. This is a distinct advantage over vineyards that have recently been converted to organic viticulture or that have been contaminated by neighbors spraying chemicals.

The actual winemaking begins with the grape harvest, which is carried out manually or mechanically, depending on the location of the vineyards. After a 2-week maceration, Sangiovese and Canaiolo grapes produce a fruity red wine with fine tannins. The 12 months of aging in large oak barrels refine this Chianti Darno.

Casina di Chianti Classico DOCG must be grown in central Tuscany. This organic wine meets this requirement because it is produced in Castellina in Chianti, in one of the best wine-growing areas in Tuscany in the vineyards of the Casina di Cornia.

 

Organic wine - profile

  • Color: Bright, vivid red, with violet hues in a youthful state, which evaporates with increasing maturity.
  • Nose: holding a bouquet of wild berries and spicy notes of wild herbs and spices.
  • Palate: requires some patience when young, but 3 years after harvest time it offers all the positive and typoical characteristics of the Sangiovese grape with fruit, mouth-filling, spicy flavors and a striking and well integrated structure with ripe tannins and a very long finsh.

 

Organic wine - processing, Casina di Cornia, Chianti Classico

The manual harvest was carried out at the beginning of October 2016. The grapes were then lightly pressed during the period of cold maceration, then fermented for 6 weeks in large wooden vats. Finally, they were transferred to barrels (80% new), in which malolactic fermentation and ripening took place for 12 months.

Casina di Cornia is one of the few organic crops that manage in the vineyard without copper sulphate. The grape harvest will of course be done by hand. The grapes come from a small vineyard planted with Merlot vines in 1999. They are harvested by hand in mid-September. After more than 35 years of organic cultivation, no residues from previous "sins" (pesticides) can be found in the soil. In addition, the vineyards are surrounded by forest and protected from outside influences. As a result, pesticides cannot get directly into or onto the vines either via the roots or the air. This is a clear advantage over vineyards that have recently been converted to organic viticulture or that have been contaminated by neighbors spraying chemicals. The actual winemaking begins with the grape harvest, which is carried out manually or mechanically, depending on the location of the vineyards. After a relatively short maceration, the Sangiovese grapes produce a fruity red organic wine with few tannins. It is therefore ready to drink early and can be stored for less long.
The 6-month aging in large oak barrels refines this Chianti without suppressing the fruity aromas of the Sangiovese grapes.
