The Domaine de Marcoux not only includes vineyards in the Châteauneuf du Pape and Lirac appellation, but also in the Côtes du Rhône appellation. There are 2 hectares near Orange, 1 hectare in a place called "Maucoil" and 1 hectare in a place called "Bois Lauzon". The vines grow on soils made of alluvium and clay. "We apply our working methods in the vineyard and in the cellar in the same way for all our wines. We harvest by hand, transport the grapes to the cellar in 50 kg boxes, and sort the grapes in the vineyard and in the cellar. We only use the yeast on the grapes for fermentation. The maturation of the Côtes du Rhône takes place in concrete tanks and lasts 10 months."

Organic wine - processing, Domaine de Marcoux, Lirac

The vines grow on limestone soil where successive erosion has deposited red clays, gravel, sand and pebbles on the surface.

The harvest is done manually, with the grapes first sorted in the vineyard and then brought back to the cellar in 50 kg cardboard boxes. A second sorting takes place in the cellar. The berries of the grapes are separated from the panicles, lightly crushed, then macerated in the mash, cooled. As with all Domaine de Marcoux wines, no foreign yeasts are used for fermentation. During fermentation, the temperature is regulated and the mash is pumped over daily. The aging takes place in concrete barrels and in foudres. Bottling usually takes place 18 months after harvest.

Organic wine - production, Domaine de Marcoux, Châteauneuf du Pape, white

The following grape varieties are permitted for the production of the white Châteauneuf du Pape: Roussanne, Grenache blanc, Bourboulenc, Picpoul, Clairette and Picardan.

For this vintage, Rousanne grapes were used, grown on half a hectare of the vine-yard "les esqueirons". which were planted in 1987 on the western slope of the
village hill. The Bourboulenc grapes come from the "les bousquets" vineyard. Some Clairette and Grenache Blanc grapes come from several scattered small plots, but they make up only 2% of the total.

The soils in the vineyards consist of clay, colluvium and chalk lime from the Barremic period.

The harvest is done manually in boxes of 50 kg. In the cellar, the grapes are pressed immediately, the juice is poured into stainless steel tanks, cooled so that the
solids settle and can be removed. The alcoholic fermentation can finally start with natural yeasts at a control of the temperatures around 17 ° C. As soon as the alcoholic fermentation is complete, the coarse yeasts are removed and the wine continues to mature on the fine lees lees in stainless steel tanks and vats. After about 7 months it is bottled.

The harvest of the grapes by hand is the culmination of a good and busy year in the vineyard, which is eagerly awaited by every winemaker. Because the weather, maybe it's already the climate, can destroy the expectations for a good harvest at the last moment. 50 % of the grapes are de-stemmed and spontaneously fermented together with the other 50 % with the so-called maceration semi-carbonique, that is, with the whole berries on the grapes. This spontaneous fermentation lasts 10 days.

After alcoholic fermentation, the so-called lactic acid fermentation takes place, in which the more aggressive malic acid is converted into lactic acid. After that 25% of the organic wine matures for 5 months in oak barrels and 75% in the big barrel.

The grapes are traditionally picked by hand. A part is separated from the panicles and fermented spontaneously together with the larger part of the grapes with panicles by means of the so-called semi-carbonique maceration, i.e. with the whole, undamaged berries still on the panicles. Spontaneous fermentation means that no foreign yeasts are added to the grapes, but that fermentation is fermented with the yeasts on the grapes. However, this assumes that the grapes have not been treated with fungicides in the vineyard. Only with these original yeasts of the grapes can the characteristics of the grapes, the soil and the climate be expressed in the organic wine. Organic viticulture has been practiced in the vineyards of Château La Canorgue since the 1970s, including elements from biodynamic viticulture. The harvest volume of the grapes, which were harvested manually at night at cool temperatures, was very low at 30 hl/hectare. This beautiful white wine is correspondingly tasty. This manual work costs significantly more than mechanical harvesting, but it ensures that only good grapes and nothing else end up in the wine press. The grapes are then lightly crushed so that some juice comes out and the so-called mash is created, which is cooled and macerated for a few hours. Fermentation takes place with the grapes' own yeasts (spontaneous fermentation) under a CO2 atmosphere in order to prevent contact with air and to be able to limit the addition of sulfite to a minimum. This white organic wine matured for 2 months in wooden barrels on fine yeast. This increases its flavor intensity and shelf life.

Les raisins du Coin Perdu proviennent d'un vignoble dont les vignes ont plus de 100 ans. Les cépages Syrah, Grenache, Mourvèdre et Cinsault ont ensuite été plantés dans un vignoble en «coffret mixte». Ils mûrissent ensemble et sont également récoltés et transformés à la main ensemble. Cependant, la récolte n'est que de 20 à 25 hectolitres par hectare, il est compréhensible que ce vin coûte un peu plus cher que les autres vins bio du Château La Canorgue. La vinification suit les méthodes traditionnelles en ce sens que 50% des raisins sont débarrassés des tiges et des panicules et 50% des tiges et des panicules dans la purée sont fermentés spontanément avec la propre levure du raisin pendant une période de 20 jours. Manual grape harvest with only a small harvest. The berries were freed of rosettes and stems, pressed with a modern pneumatic press, the juice was pre-clarified by reducing its temperature and then immediately fermented spontaneously with the grape's own yeast for 12 days at a temperature of 17-18 ° C.

Organic wine - processing, Clos du Joncuas, Vacqueras, La Font de Papier

Dany Chastan, one of the two charming daughters of the winemaker is responsible for winemaking in the cellar. She shapes the traditional style of wine as to Region, Grape and soil fits best. In early October, the grapes are harvested manually in optimum ripeness, followed by a slow fermentation in mash tubs for about 18 days without the addition of selected yeasts. During this operation, grape skins floating on the wine are regularly stirred with the must in order to detach all of the ingredients contained in the skins. During the subsequent 12-month aging in large oak casks, this organic wine is three times moved to different barrels, wherein the solids remain in each case on the barrel bottom. In this way, the wine clears itself without having to be filtered. arole Chastan (the 2nd Daughter) takes care of the management of the Clos du Joncuas.
