The Dominio de Verderrubi Pita, also known as Bodega Pita, is on renowned wine journalist Tim Atkin's list of the DO Rueda area with 98/100 Pointsfor the wine PITA TERRACOTA 2021 and at the top as “Wine of the Year.”

 

Organic wine - profile

  • Colour: pale yellow, clean and bright with greenish reflections.
  • Nose: high aromatic intensity where scents of citrus fruits predominate, along with hints of brioche, honey, chocolate and peach aromas , as well as ripe fruits.
  • Mouth: even the first contact reveals that this is a full, voluminous wine. Fermentation and maturation in large barrels integrates the fruity components, its acidity and the alcohol  in a perfect way and leads to a complex white wine with a long-lasting finish.
  • Drinking recommendation: 10-12° C could be the right drinking temperature. Enjoy this wine with carefully prepared dishes or simply for the joy of wine.

The grape harvest, 6,000 kg/hectare, was carried out by hand in the early morning at a cool temperature and brought to the wine cellar in 7 kg stackable boxes. There they were stored in cold rooms at 10° C for a few hours and then lightly crushed in a so-called grape mill. Some of the juice runs out of the berries without being pressed, which then macerates at a low temperature. The must is pre-clarified by lowering the solids and at the same time important enzymes are created. These processes serve to avoid oxidation and to preserve the fruity, fresh aromas of the later wine. This is fermented spontaneously with the grapes' own yeasts in approximately 500 liter French oak barrels and then matured on the fine yeast for eight months.

The vines grow in "wire training", so like on a high trellis. What is special, however, is that the grapes grow at working height, the other leafy shoots protrude like a wall up to 2.5 m high. This improves photosynthesis and thus the growth of the grapes.
The manual harvest started on September 4th and lasted 10 days. The harvest amount was 300,000 kg Verdejo grapes. At 6,000 kg per hectare, it was slightly lower than the average. The grapes were in perfect condition and the sugar / acid ratio was very harmonious. The fermentation took place spontaneously with the grapes' own yeasts, which ultimately preserve the terroir-specific character of this organic wine. After fermentation, the wine matured on its "fine yeast" for four months. This process creates valuable enzymes that positively influence the taste, stability and shelf life of the wine.

The 2023 harvest began with the Sauvignon Blanc grapes at the end of August. The harvest result was very low compared like in the previous year. The vines, which were still very young at the age of eleven years, had to suffer from prolonged drought because their roots are not yet buried as deep as the roots of the older Verdejo vines. Apart from the small amount of harvest, the quality of the grapes was excellent. After maceration at low temperature, the fermentation took place spontaneously with the grape's own yeasts, which ultimately preserve the terroir-specific character of this organic wine. After fermentation, the wine matured on its "fine yeast" for four months. This process creates valuable enzymes that positively influence the taste, stability and shelf life of the wine.

The grapes thrive in the Vinya Nuria vineyard on sandy soils interspersed with large stones left by the Noguera Ribagorçana river thousands of years ago. It has been certified biodynamically by Demeter since 2012 and is covered with wild flowers and herbs. As for all Lagravera wines, the grape harvest is done manually, leaving less well-developed grapes on the vine. The actual winemaking begins by separating the grapes from swn stalks and panicles and squeezing them lightly so that part of the juice they contain can escape. This juice and the berries then macerate for eight hours at a temperature of 6 ° C, during which natural enzymes are formed that help develop the taste and improve the later shelf life of the wine. The fermentation is carried out with the grape's own yeast, which preserves the typical grape and soil aromas. The wine then matures in stainless steel tanks for 4 months.

Life is made up of cycles, and so is wine. They make us improve, grow, and develop ourselves and what we do. And so this wine "Cíclic" pays homage to all who appreciate it. It is a white wine made from the best Grenache blanc grapes from the Vinya Núria vineyard. It matures for years in the bottle, in which it can further develop and accentuate its complex variety of fresh and mineral nuances.

The harvest is carried out by hand at dawn when the temperature is still cooler. Immediately afterwards the grapes are brought to the winery in small boxes thus avoiding damaging them and to preserve its fresh aromas. For this white organic wine, the Chardonnay grapes, which grew on chalky, calcareous soil, were harvested by hand in mid-September. Its juice was fermented in French oak barrels for 2 months with the grapes' own yeasts at a cool temperature. Then transferred to other barrels and matured and refined on the fine lees for 2 months. This way of working gives the wine a slightly more intense color and more pronounced ripening aromas, as well as a better shelf life.

The winery comprises 100 hectares of vineyards, 30 hectares of which are cultivated biodynamically according to the criteria of the Demeter Association and 70 hectares organically. With a few exceptions, the grapes from the individual vineyards are used for cuvées, i.e. for wines from different varieties. These can come from a biodynamically or biologically assessed vineyard. For this reason there is only one wine and one cava that can bear the Demeter logo. In the course of the next few years, all vineyards will subsequently be converted to biodynamic viticulture.

This wine is made from a single grape variety, the Xarello grape, which grows in Can Miquel de les Planes in Gelida, on the slopes of Espiells. This 2 hectare vineyard is cultivated according to the principles of organic farming, which makes it possible to obtain grapes of the best quality to produce this excellent wine.

The vines were planted in 1974 at a distance of 1.2 m from vine to vine and with a line spacing of 2.8 m on a slight slope in a south-east orientation. You are now at the optimal age in which quality and quantity are in balance. The soils in this vineyard are of moderate depth, with clay structures, porous with great microbiological activity.

Usually the climate is ideal, moderate rainfall allows the grapes to develop well in the final vegetation cycle and to expect high quality harvests.

The grape harvest in the vineyards of Vins el Cep begins in mid-August with the Pinot Noir grape variety and ends at the end of September with the Cabernet Sauvignon variety.

The grapes are harvested by hand and brought to the cellar for further processing in transport boxes as quickly as possible. There they are gravity fed into the wine press, where 45 - 50% of the juice comes out of the berries without pressure and the rest is gently pressed. This is the most subtle way to extract grape juice. This is followed by a very short maceration in the skins at a low temperature. Then the berry skins and seeds are separated from the grape juice, which begins to ferment in small stainless steel tanks.

This Vins el Cep Clot del Roure was selected by the Wine Spectator as one of the best hundred wines. It comes from 75 year old, deep-rooted Xarel Llo vines from a vineyard that is cultivated biodynamically according to Demeter guidelines.

Clot del Roure is the name of this Can Prats vineyard planted in 1943 in San Llorenç, in the privileged area of ​​Espiells, in the catchment area of ​​the Annoia River. This 1.5 hectare vineyard is cultivated according to the principles of biodynamic agriculture. In the deep, chalky soil there, the Xarel Lo vine finds the best conditions to bring out its potential in nuanced wines.

After 3 years in which the drought brought the harvest to dates never brought forward. there was sufficient rain during the spring. Then a few drops fell shortly before the harvest, combined with a drop in temperature. This led to a good harvest result with an excellent degree of ripeness of the grapes.

The grape harvest was carried out manually and at the same time only the best grapes were selected, brought to the cellar in small transport boxes, followed by a short maceration with contact with the peel of the berries, then the grape juice was extracted with only light pressure and placed in barrels made of chestnut and Oak wood fermented spontaneously with indigenous yeasts. After the end of fermentation, this biodynamic wine with its fine yeast also matures in these barrels.

Of course, good technical training is required to produce flawless wines, but to create really good wines with that special something, you need the so-called soft skills in dealing with the vines in the vineyard, their constant observation, their reactions to temperature, humidity, sun exposure. Determining the harvest time with regard to the desired type of wine, deciding on the fermentation process with temperature and duration, and finally choosing the type and duration of maturation, decides whether a wine with soul is created as we like it.
This has been very successful with the Finca las Caraballas Verdjo Rueda DO.

 

Organic wine profile

  • Colour: light yellow with greenish reflections
  • Nose: diverse scents fruity scents reminiscent of a homemade compote of apricots, ripe pineapple, citrus fruits, but also herbs and freshly cut grass.
  • Mouth: these flavors also unfold in the mouth, where they combine with floral notes of white flowers, a delicate shade of bitter almond and in a full and long aftertaste.
  • Drinking recommendation: Serve this white wine at a temperature of 7-10° C with starters, fish dishes, tapas.

 

Organic wine preparation, Finca las Caraballas, Verdejo, Rueda DO, white

At the Finca las Caraballas, the most modern viticulture and winemaking techniques merge with tradition, whereby the interests of nature are always taken into account and promoted.

Since the daytime temperatures still reach 35°-40°C in September and the Verdejo grapes were without blemish, they were harvested at night with harvesters at 15°C. In this way, not only could costs be reduced, but also fresher grapes could be harvested without oxidation, resulting in a fresher and fruitier wine. However, the immediate further processing of the grapes in the wine cellar also contributes to this. The must is cooled to 10°C, during which a pre-clarification takes place, allowing the solids to sink to the bottom and a clear must to be fermented into wine. No foreign yeasts are added to this, because the organically grown grapes have intact endogenous yeasts that create a true terroir wine that reflects the characteristics of the soil, the vines and the climate.
