Organic wine - processing, Château Saint Jean Lez Durance, Pimayon, Pierrevert AOP, rosé

The terroir of Pimayon is located on the highest of the 7 hills, where Jean Giono (a French writer born near the Château Saint Jean les Durance in Manosque) was walking. The vines grow there on barren, but always sunny ground with exceptional thermal amplitudes. The wines are fine and aromatic.

Because of the high temperatures that still occur in Provence in September, the grape harvest is done at night with harvesters or manual during the late evening until complete darkness at cooler temperatures.  Then follows a relatively elaborate winemaking to achieve the best possible wine.  First the grapes are squeezed very gently and gently, then subjected to a short cold maceration in thermoregulated stainless steel tanks, during which important stabilizing enzymes are formed and the colorants from the berry skins are transferred to the juice. The juice is then slowly fermented in stainless steel tanks at a low temperature.

Organic wine - processing, Château Saint Jean lez Durance,  IGP Alpes de Haut Provence, Liberty, vin bio, rosé

The Les Vannades vineyard is located on the plain on the north bank of the Durance, very close to the winery. The vines grow there on alluvial land. The grapes are harvested at night with harvesting machines, as the temperatures here in September are still too high for a daytime harvest to be able to produce fresh, fearful rosé wines from the grapes. First, the grapes are squeezed very gently and gently, then subjected to a brief cold maceration in thermoregulated stainless steel tanks, during which important stabilizing enzymes are formed and the colorants from the berry skins pass into the juice. The juice is then slowly fermented in stainless steel tanks at a low temperature. The young wine then matures from the yeast for a few months and is then lightly filtered just before bottling.

Organic wine - processing, Domaine de la Vallongue, Les Baux de Provence, AOP, Garrigues rosé

In a small harvest of only 40 hl / ha, the content of vitamins and minerals in the grapes is much higher than for larger harvest volumes as it is allowed and achieved for example in Germany of an average with approximately 100 hl/ha. Consequently wines are tastier and more valuable at lower yields.

The grapes for this rosé wine were pressed immediately after harvest directly decanted cold and performed fermentation at low temperatures. In the usual red wines malolactic fermentation was dispensed with in favor of clarity and freshness in the wine.

Domaine la Marseillaise, Côtes de Provence, biodynamic wine rosé, 2022, de 15,80€, from € 15.80

Biodynamically produced wines have a certain something that other wines lack, they say. It is difficult to describe, perhaps it is the complexity and harmony of the Domaine la Marseillaise, Côtes de Provence, biodynamic wine rosé. The Provence is famous for its excellent rosé wines, and this rosé is a particularly fruity and flavorful wine that is exemplary. Judge for yourself, we are curious about your opinion.

Biodynamic wine - profile   Demeter-Logo

  • Color: salmon pink
  • Nose: it smells of apricot and peach with spicy notes
  • Mouth: the first impression is surprisingly full-bodied, the second emphasizes the abundance of fruity aromas and its taste is intense, round and very pleasant.
  • Drinking recommendation: enjoy this white wine with a temperature of 9-11 ° C. Remember, the cold deprives every good white and rosé wine of its aromas. They are not a soft drink

Biodynamic wine preparation Domaine la Marseillaise, Côtes de Provence, rosé

The loamy vineyard soil and the vines growing on it are processed and maintained with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 18 years old (Syrah and Grenache). They are harvested by hand and brought to the winery in 20 kg containers, where they are freed of stems and panicles, lightly squeezed in a grape mill and immediately pressed. The fermentation starts spontaneously with the grapes' own yeast at a temperature of 18-20 ° C and lasts about 4 weeks. No filter aids, i.e. no proteins of plant or animal origin, are used for the light filtering of the wine.

Organic wine - processing, Domaine les Patys Ventoux, AOC, Racines du Ciel rosé, organic wine

The Mediterranean vines grow in vineyards on a slight slope and facing south on clay limestone soils covered with pebbles and weathered scree from Mont Ventoux. The grapes are harvested mechanically at an earlier stage of ripeness. This is followed by a short maceration in the mash, during which the coloring matter is released from the grape skins. The liquid is then separated from the pomace and fermented at a low temperature.

Biodynamic wine - processing, Château Romanin, Les Baux de Provence, rosé

The different geological conditions present on the vineyards of Château Romanin were decisive during the planting of the vines. As a result, Grenache and Mourvèdre grapes were planted in 1991 on gravel soils (gravels and sand), followed by Syrah and Counoise on sandy-clay soils in 1992 and 1993 respectively. Production volume per hectare is low, which is a prerequisite in the production of quality wines. Harvesting is done by hand, and the grapes are then pressed gently. During a maceration at 10 ° C, the must clears and enzymes are released, which give the wine fruity notes. The liquid is then collected separately and fermented at a temperature between 18 and 20 ° C. This organic wine is then aged on lees in stainless steel vats for six months, during which it will undergo several batonnages.

Every work step, both in the vineyard and during winemaking in the cellar, up to the filling of the bottle, must take place at a certain position of the moon and the stars.

Biodynamic wine - profile   Demeter-Logo

  • This is what it looks like: Raspberry pink with a nice sheen.
This is how it smells: The nose is aromatic with notes of red fruits such as wild strawberries and gooseberries.
  • This is how it tastes: lively and tasty on the palate with juicy aromas of red cherries and blackcurrants, which in combination with the aromas of citrus fruits lead to a long finish and make you want to take the next sip.
  • My drinking recommendation: This cuvée goes perfectly with aperitifs on a sunny afternoon or evening with tapas or with a chocolate cake (Sacher cake).

Biodynamic wine - processing, Château Romanin, IGP Alpilles Rosé

The different grape varieties for this Demeter organic wine are each harvested by hand at a perfect degree of ripeness and then cooled to 10 ° C for 24 hours in a cold chamber and then selected again. The grapes are pressed lightly and slowly; during a short maceration at 10 ° C, the must clears itself and forms enzymes that ensure clear fruity notes in the wine and reduce the need for sulphurisation. Then the must is separated from the solid components of the grapes and fermented at 18 to 20 ° C in stainless steel tanks. The lactic acid fermentation that usually follows is suppressed by means of cold. The wine is then matured for five months on its fine lees in stainless steel tanks with repeated stirring. Then this wine is only lightly filtered (without proteins of animal origin) and bottled.

The vines grow on sandy soil containing molasse which brings out the fruity components of these varietals especially well. The winemaking is done partially in accordance with the so-called Saigne method (the grapes are just crushed, and the juice drains off without pressing), and the other part is pressed directly. Fermentation is done at a low temperature in stainless steel tanks. Afterwards the wine has been filtered and bottled soon after.

Organic wine - processing Les Béates, Coteaux d'Aix en Provence, rosé

The grapes, which are harvested manually when fully ripe, are removed from the stems, lightly squeezed so that the juice has 12 hours to slowly run out without being pressed. Then the spontaneous fermentation with the grapes' own yeast begins at a low temperature. This organic wine is aged and refined in demi muids (wooden barrels with a capacity of 500 liters) for a period of nine months on the yeast storage, which is regularly mixed with the wine.

Organic wine - processing, Château La Canorgue,  Côtes du Luberon, AOC, rosé

At the Château La Canorgue, of course, the grapes are harvested by hand. After a short maceration period, during which the dyes can be removed from the grape skins, the pressing takes place with a pneumatic press. The juice then ferments for 12 days with the grape-yeasts (endogenous) and CO2 atmosphere to prevent air contact. A malolactic fermentation is omitted.
