  • This is what it looks like: Raspberry pink with a nice sheen.
    This is how it smells: The nose is aromatic with notes of red fruits such as wild strawberries and gooseberries.
  • This is how it tastes: lively and tasty on the palate with juicy aromas of red cherries and blackcurrants, which in combination with the aromas of citrus fruits lead to a long finish and make you want to take the next sip.

Biodynamic wine - processing, Château Romanin, IGP Alpilles Rosé

The different grape varieties for this Demeter organic wine are each harvested by hand at a perfect degree of ripeness and then cooled to 10 ° C for 24 hours in a cold chamber and then selected again. The grapes are pressed lightly and slowly; during a short maceration at 10 ° C, the must clears itself and forms enzymes that ensure clear fruity notes in the wine and reduce the need for sulphurisation. Then the must is separated from the solid components of the grapes and fermented at 18 to 20 ° C in stainless steel tanks. The lactic acid fermentation that usually follows is suppressed by means of cold. The wine is then matured for five months on its fine lees in stainless steel tanks with repeated stirring. Then this wine is only lightly filtered (without proteins of animal origin) and bottled.

  • Color: white golden colour
  • Nose: white flowers (honeysuckle), then notes of quince, tangerine and strawberries.
  • Mouth:full and mineral, with nice aromatic roundness with fine accent of fresh bread crust and a pleasant, long finish.
  • Serving suggestion: This wine will combine perfectly with sea urchins, oysters, caviar or scallop mussels or high-quality fish in creamy sauce.

A prerequisite for producing high quality wines is a lower yield, which is intended in the Château Romanin. The grape picking was manually performed. Afterwards, the grapes were sorted again on the conveyor  belt, the whole grapes were then pressed slowly, followed by pre-clarification at 10° C and the alcoholic fermentation at 18 to 20° C in stainless steel tanks. The malolactic fermentation, which then normally started, was suppressed to preserve the freshness of the wine.The maturation of this wonderful white organic wine on the fine yeast took 5 months. During this time a regular batonnage (stirring) was applied, which gives the wine deeper and more complex flavors, as well as a better shelf life.

The vines thrive on soil created by the degradation of limestone rocks formed during one of the last cold periods of the Quaternary. The vineyard has been certified organic since 2006 and biodynamic methods according to Demeter since 2015.

The grapes are harvested exclusively by hand, completely destemmed, macerated according to the traditional method for 3-4 weeks and then fermented for 15 to 20 days in conical tanks at a controlled temperature. Aging in French oak barrels for 12 to 14 months, then 3 months in large tanks and 1 year in the bottle before leaving the winery for the first time.

The vines were planted in vineyards in the Pic Saint-Loup appellation, on soil formed by the quarrying of Quaternary limestone. These peculiarities result in fine and elegant wines, rich in the characteristics of this unique terroir.

The grape harvest is done by hand or mechanically according to the plots. The grapes are entirely destemmed, followed by a traditional winemaking process with 3 to 4 weeks maceration in concrete tanks and conical trunk tanks. Understand the word "ECLAT" in the old French sense as bang, splendour, shine, rise, burst. It is the story of a brief moment during the grape harvest for this rosé, when night gives way to day, the night slowly disappears and the first rays of sun touch the garrigue, the landscape takes on the color of the bright northern lights.

The grape harvest begins at night with a harvester under artificial light, because at this time it is still relatively cold. As the morning light increases, the harvesting process is completed and the grapes are immediately taken to the winery for winemaking. This avoids oxidation and preserves all the fruity aromas of the grapes. They are partially de-stemmed, cold pressed, macerated, pre-clarified and fermented at a controlled, low temperature. The aging of this biodynamic wine in stainless steel tanks takes 5 to 6 months.

Biodynamic Wine - Profile  Demeter-Logo

  • Colour: Garnet red with brilliant reflections.
  • Nose: Aromas of dried figs, quince paste, garrigue and liquorice. A subtle and greedy fine nose.
  • Mouth: Aromas of fresh red berries, spices (pepper) and garrigue (laurel, thyme), accompanied by a note of menthol. An aromatic mouth with velvety tannins.

 

Biodynamic wine - Made by Château de Lascaux, Languedoc AOC, garrigue, red

The vineyards are 130 m above sea level on a gently rising south-east slope. The soil consists of clayey loam and limestone fragments from the erosion of limestone rock, which has mixed with marl and marl-limestone, it is good at absorbing and storing water. In the Mediterranean climate with longer periods of drought, this ability has a very positive effect on the ripening of the grapes.

This vineyard, planted with the Syrah, Grenache and Mourvedre grape varieties, has been going organic since 2006 and since 2018 using biodynamic methods following the Demeter guidelines managed. In order to ensure the health of the grapes and to promote their natural potential for rich flavors and aromas, we use natural, self-produced compost, medicinal plant preparations, silica and horn manure. This also increases the fertility and biodiversity of the soil in the vineyards, but also the resistance of the vines to various unfavorable influences of climate change.

Depending on the plot, the grapes are harvested manually or by machine and completely destemmed. The actual winemaking begins with a 3 to 4 day maceration of the lightly crushed grapes and a 14 day alcoholic fermentation at a controlled temperature. The aging of this biodynamic wine in concrete tanks takes 6-8 months.

Biodynamic wine - Made by Château de Lascaux, Languedoc AOC, Garrigue, white

This vineyard is planted with 6,200 vines/hectare, the yield for this white Demeter wine was 39 hl/ha. It has been organic since 2009 and since< strong> Farmed in 2018 using biodynamic methods according to Demeter guidelines. Natural, self-produced compost, medicinal plant preparations, silicic acid and horn manure are used to ensure the health of the grapes and to promote their natural potential for rich flavors and aromas. This not only increases the fertility and biodiversity of the soil in the vineyards, but also the resistance of the vines to various unfavorable climate influences.

Depending on the plot, the grapes are harvested by machine or by hand. Completely destemmed. The pressing takes place after a short cold maceration. Clarification of the must by settling the solids, fermentation at cool, controlled temperature. Maturation of the Demeter organic wine in stainless steel tanks on the yeast for a period of 4 to 5 weeks.
