Organic wine preparation Quinta do Cardo, Beira Interior DOC Superior Reserva, red

Vines aged more than 40 years produce grapes of excellent quality and expressiveness. They are harvested by hand and fermented in stainless steel tanks for 30 days at 14°C. The very low temperature for fermentation and the long fermentation time are an indication that great importance is attached to preserving all the aromas of the grapes, its freshness and intensity of this red organic wine. The subsequent maturation and refinement on the fine lees serves to increase its expressiveness and its good storability.

The wine Courelas da Torre comes from the vineyards of Redondo, whose sandy soil gives it the charming abundance and elegance. It is farmed completely free from herbicides and pesticides and the grapes are harvested manually to ensure their outstanding quality.

After the grapes have been put into cases holding 25 kg and brought to the estate for further processing, the berries are separated from the panicles, followed by crushing the berries, the alcoholic fermentation with natural yeasts in stainless steel tanks, then a slow pressing and separating the the wine from the skins and kernels. The wine rst a few month while the malolactic fermentation takes place. Before it is filled in bottles, a slight filtering without the us of  proteins derivng from animals fineshed the wine making.
