The terroir of Pimayon is located on the highest of the 7 hills, where Jean Giono (a French writer born near the Château Saint Jean les Durance in Manosque) was walking. The vines grow there on barren, but always sunny ground with exceptional thermal amplitudes. The wines are fine and aromatic.

Because of the high temperatures that still occur in Provence in September, the grape harvest is done at night with harvesters or manual during the late evening until complete darkness at cooler temperatures.  Then follows a relatively elaborate winemaking to achieve the best possible wine.  First the grapes are squeezed very gently and gently, then subjected to a short cold maceration in thermoregulated stainless steel tanks, during which important stabilizing enzymes are formed and the colorants from the berry skins are transferred to the juice. The juice is then slowly fermented in stainless steel tanks at a low temperature.

The Château St. Jean Lez Durance Pierrevert AOP Pimayon blanc with its greenish-golden color, we recognize the modern winemaking method in this white organic wine. The grapes used for this wine come from the bew vigneyard called Pimayon in the appellation Pierrevert AOP, through which a unique aromatic diversity has been achieved. The young winemaker Jean-Guillaume knew how to integrate the light, fruity components into a relatively full-bodied wine. Very remakably.

In September, even the higher parts of Haut Provence can still be quite hot. Therefore, the grape harvest is done by hand and machine from the late evening till complete darkness at cooler temperatures. The grapes are transported as quickly as possible to the nearby winery. There, the berries of the Grenache and Cinsault-grapes are completely separated from stems and panicles, then pre-clarified in cold maceration. This is followed by alcoholic fermentation at controlled temperature. During a ripening period on the lees, this organic wine is stirred regularly, then lightly filtered and bottled.

By the way: Nearby is the Lac des Vannades, an artificial lake created in 1989 by the dredging of the gravel in the riverbed of the Durance. Today, the lake serves holiday makers and recreation seekers as a bathing lake. Another attraction is the nearby Gorges du Verdon.  For hikers, climbers or kayakers and nature lovers a worthwhile  destination. The Château Saint Jean lez Durance Pimayon red is a generous organic wine with unbelievable fullness, with complex, rich aromas in perfect harmony in a long lasting finish. 

 

Organic wine - profile

  • Eye: deep violet colour in adolescent age, then increasingly changing to purplish red.
  • Nose: intense scent of ripe fruit, dried fruit, cocoa, black pepper, roasted coffee and subtle wooden scents.
  • Mouth: generous, rich, concentrated. With aromas of licorice, dark chocolate. Generates a balsamic mouthfeel, velvety, fleshy, dense, silky-soft tannins, full-bodied, full-bodied, intense and long on a finish.
  • Recommended Serving:at 16-17° C. It goes well with dark, braised meat with gravy, mature cheeses, richly spiced dishes and rich stews.

  • Mouth: In the mouth and on the palate I find this wine both fresh and fleshy, with a hint of orange peel, the scents perceived with the nose contribute to the harmonious appearance of this wine, which ends with a nice length.
  • Drinking Recomendation: Serve at 10 to 11° C, this high-quality rosé offers the perfect pleasure - please never serve it colder! Goes great with a seared tuna or chicken grilled with lemon and thyme.

 

Organic wine - processing, Domaine de la Vallongue, Les Baux de Provence, AOP, Garrigues rosé

In a small harvest of only 40 hl / ha, the content of vitamins and minerals in the grapes is much higher than for larger harvest volumes as it is allowed and achieved for example in Germany of an average with approximately 100 hl/ha. Consequently wines are tastier and more valuable at lower yields.

The grapes for this rosé wine were pressed immediately after harvest directly decanted cold and performed fermentation at low temperatures. In the usual red wines malolactic fermentation was dispensed with in favor of clarity and freshness in the wine.

Especially the care of the vines in the vineyard, we owe the emergence of this paradisiacal wine. It begins with the cutting of the vines in the winter, in spring the shoots must be tied to the wires, during the vegetation phase the shoots grow extremely fast and must be thinned out several times. A few weeks before the harvest leaves are removed above the grapes so that they can still capture every ray of sunshine. The highlight of a wine year is the vintage. It starts when the most important and desired parameters "sugar, acidity and PH value" are reached. Of course, at the Château Romanin it is done by hand. By the way, during the grape picking by hand every single grape can be controlled and, if necessary, sorted out.

Experienced winemakers know that it is worthwhile to treat the vines in the vineyards well. Because the better the grapes, the higher the quality of an organic wine. In addition, during the wine processing it can be dispensed on many technical steps and other auxiliaries and additives. With this approach you get very close to the term "natural wine".  A term, which  is not exactly defined.

In any case, only a small amount of sulfur is added to this biodynamic wine, which prevents the oxidation of important flavor-enhancing ingredients in the wine and the enjoyment value is retained longer. Based on many years of experience in the tasting of natural wines or natural wines, we consider these terms more as a natural wines marketing tool than a promise of enjoyment. Moreover, it would be a shame if winegrowers worked hard for a whole year in the vineyard and end up presenting flawed and often inedible wines. That's why it's so easy here at the Château Romanin to make the best possible organic/biodynamic wines: The stems and panicles are separated from the berries, then slightly squeezed and fermented spontaneously in stainless steel tanks without the addition of foreign yeasts. Thereafter, the wine is transferred to another stainless steel tank. In the process, the pomace (berry skins) is left behind. Now the malolactic fermentation begins, as is the case with all red wines, converting the aggressive malic acid into the milder lactic acid. After several months of maturation, this wine produced according to the Demeter guidelines is only filtered, very little sulfur is added shortly before bottling.

  • Color: intense ruby red color with a beautiful shine.
  • Nose: The nose reveals aromas of black berries: black currant, blueberry, blackberry and floral notes of hawthorn and orange blossom. The woody note is delicate and particularly well fused with the richness of the aromas.

Although the grapes are picked by hand in perfect ripeness, a further selection of the grapes is done on a reading table. Biodynamic wine - processing, Château Romanin, Les Baux de Provence, rosé

The different geological conditions present on the vineyards of Château Romanin were decisive during the planting of the vines. As a result, Grenache and Mourvèdre grapes were planted in 1991 on gravel soils (gravels and sand), followed by Syrah and Counoise on sandy-clay soils in 1992 and 1993 respectively. Production volume per hectare is low, which is a prerequisite in the production of quality wines. Harvesting is done by hand, and the grapes are then pressed gently. During a maceration at 10 ° C, the must clears and enzymes are released, which give the wine fruity notes. The liquid is then collected separately and fermented at a temperature between 18 and 20 ° C.     This is how it smells: The nose is aromatic with notes of red fruits such as wild strawberries and gooseberries.

Biodynamic wine - processing, Château Romanin, IGP Alpilles Rosé

The different grape varieties for this Demeter organic wine are each harvested by hand at a perfect degree of ripeness and then cooled to 10 ° C for 24 hours in a cold chamber and then selected again. The grapes are pressed lightly and slowly; during a short maceration at 10 ° C, the must clears itself and forms enzymes that ensure clear fruity notes in the wine and reduce the need for sulphurisation. Then the must is separated from the solid components of the grapes and fermented at 18 to 20 ° C in stainless steel tanks. The lactic acid fermentation that usually follows is suppressed by means of cold. The wine is then matured for five months on its fine lees in stainless steel tanks with repeated stirring. Then this wine is only lightly filtered (without proteins of animal origin) and bottled.

A prerequisite for producing high quality wines is a lower yield, which is intended in the Château Romanin. The grape picking was manually performed. Afterwards, the grapes were sorted again on the conveyor  belt, the whole grapes were then pressed slowly, followed by pre-clarification at 10° C and the alcoholic fermentation at 18 to 20° C in stainless steel tanks. The malolactic fermentation, which then normally started, was suppressed to preserve the freshness of the wine.The maturation of this wonderful white organic wine on the fine yeast took 5 months. During this time a regular batonnage (stirring) was applied, which gives the wine deeper and more complex flavors, as well as a better shelf life.

  • Nose: overwhelming scents of red fruits and berries reminiscent of a cherry jam, blackberries, exotic spices and dry wild herbs.
  • Mouth: impressively lively, dense and concentrated, juicy, seductive with a precise raspberry note, flowery pastille aromas and a hint of spice cake. Persistently long and smooth in the mouth, with a focus on ripe, soft tannins and floral persistence.
  • This characteristic basically applies to all Châteauneuf du Pape wines from the past 25 years with minimally different characteristics.

 

Organic wine - production, Domaine de Marcoux, Châteauneuf du Pape, red

The special feature are the large pebbles made of quartzite and clay that cover the soil of the vineyards here, as well as red sandstones and colluvium, chalk limestone from the Barremian. They store the warmth of the day, they are rich in minerals that can be absorbed by the deep-rooted old vines.

The manual harvest is based on the respective degree of ripeness of the grape varieties, which is different in each vineyard location. The grapes are sorted for the first time on the vine, which are then transported to the winery for further processing in boxes of 50 kg. Here the grapes are checked again on a sorting table and, if necessary, the less good grapes are sorted out. This is followed by the separation of the berries from the panicles, the light squeezing of the berries, whereby some of the grape juice already runs out. This mass is called the mash. It begins to ferment spontaneously with the grape's own yeast, which converts the sugar contained in the mash into alcohol and carbonic acid (escapes). During this process, which lasts 4 to 5 weeks, the temperature is regulated and the mash is pumped daily using the cap floating on it. This enables the extraction of the flavoring and coloring agents still contained in the berry pods, which pass into the wine. Maturation takes place for 18 months mainly in concrete containers and in a few barrels of 350 liter barrels.
