The Arakoa Valley in the Aïr high mountains in Niger may have reminded the winemaker Thierry Delasalle of the barren, bare flanks of Mont Ventoux in his homeland. It is located at the foothills of the mountains, where 200 m high sand dunes form the transition to the desert. There you feel insignificant and you are deeply impressed by the loneliness, the calm and the peaceful atmosphere. That is why he named his best organic wine, Domaine les Patys Ventoux AOC Arakao red, which we found overwhelming, perfectly harmonious, rich, dense, smooth and long-lasting with the first sip. He maintained this high level even on the 2nd, 3rd and 4th evenings.

Twenty to thirty year old vines that grow on the southern slope of Mont Ventoux at an altitude of 250 to 450 m above sea level, provided 30 hl of grape juice for this great organic wine. The best grapes, which were all hand-picked, are selected and fermented in stainless steel tanks at a controlled temperature. The Arakoa then matured for 12 months in new oak barrels from the Vosges and Allier regions.

Especially the care of the vines in the vineyard, we owe the emergence of this paradisiacal wine. It begins with the cutting of the vines in the winter, in spring the shoots must be tied to the wires, during the vegetation phase the shoots grow extremely fast and must be thinned out several times. A few weeks before the harvest leaves are removed above the grapes so that they can still capture every ray of sunshine. The highlight of a wine year is the vintage. It starts when the most important and desired parameters "sugar, acidity and PH value" are reached. Of course, at the Château Romanin it is done by hand. By the way, during the grape picking by hand every single grape can be controlled and, if necessary, sorted out.

Experienced winemakers know that it is worthwhile to treat the vines in the vineyards well. Because the better the grapes, the higher the quality of an organic wine. In addition, during the wine processing it can be dispensed on many technical steps and other auxiliaries and additives. With this approach you get very close to the term "natural wine".  A term, which  is not exactly defined.

In any case, only a small amount of sulfur is added to this biodynamic wine, which prevents the oxidation of important flavor-enhancing ingredients in the wine and the enjoyment value is retained longer. Based on many years of experience in the tasting of natural wines or natural wines, we consider these terms more as a natural wines marketing tool than a promise of enjoyment. Moreover, it would be a shame if winegrowers worked hard for a whole year in the vineyard and end up presenting flawed and often inedible wines. That's why it's so easy here at the Château Romanin to make the best possible organic/biodynamic wines: The stems and panicles are separated from the berries, then slightly squeezed and fermented spontaneously in stainless steel tanks without the addition of foreign yeasts. Thereafter, the wine is transferred to another stainless steel tank. In the process, the pomace (berry skins) is left behind. Now the malolactic fermentation begins, as is the case with all red wines, converting the aggressive malic acid into the milder lactic acid. After several months of maturation, this wine produced according to the Demeter guidelines is only filtered, very little sulfur is added shortly before bottling.

More thoughts, man power and care has been invested in this biodynamic rganic wine from the Château Romanin than in many other wines at much higher prices.

Biodynamic wine - profile

  • Color: intense ruby red color with a beautiful shine.
  • Nose: The nose reveals aromas of black berries: black currant, blueberry, blackberry and floral notes of hawthorn and orange blossom. The woody note is delicate and particularly well fused with the richness of the aromas.
  • Mouth: as soon as the first drops flow over the lips into the mouth, they already provide a sweet pleasure experience. The tannins are silky, the aromas of black fruits are expressed. The finish is elegant and shows a great balance between minerality and spices
  • My drinking recommendation: This cuvée could accompany a roasted nut of an Iberian pork leg with a garlic cream sauce with new potatoes roasted with rosemary.

 

Biodynamic wine - processing, Château Romanin, Les Baux de Provence, red

Although the grapes are picked by hand in perfect ripeness, a further selection of the grapes is done on a reading table. The mash fermentation (must with berries without stems and panicles) lasts for 20 to 30 days in large stainless steel tanks and wooden barrels at a temperature of 24 ° to 26 ° depending on the grape variety. After the end of the alcoholic fermentation followed by a few weeks delay of malolactic fermentation (lactic acid fermentation). After that, the young wine matures for 18 months in large wooden barrels where it refines and reaches its initial drinking maturity.

The biodynamically produced Château Romanin Les Baux de Provence AOC Le Cœur de Romanin is an organic wine of the absolute top class. It owes its existence to a good vintage with ideal weather conditions, as well as every imaginable care in the vineyard and in the cellar.

  • Colour: Le Cœur (heart) de Romanin shows a deep ruby ​​red colour.
  • Nose:The Cœur de Romanin spreads intense and surprisingly diverse aromas of dark chocolate, coffee, leather, which soon ripe with aromas of black cherries, dark berries and spices such as mint and a touch of incense into a symbiosis.
  • Palate: Very rich and complex wine with lots of fruit, good structure, velvety soft, a fine nuance of wood and almost hidden mineral notes. Its meltingly soft, concentrated tannins ensure a long wine life. It’s a lively organic wine and biodynamic wine with a beautiful long finish. Its aging potential we estimate at 10 to 15 years.

Biodynamique wine - processing, Château Romanin, Le Coeur de Romanin

The manually very carefully picked grapes for the Coeur de Romanin come from the best parcels of the Château Romanin. They were freed from the stems before they are fermented (3 weeks for Cabernet Sauvignon) and (4 weeks for Syrah and Mourvedre) in a traditional mash fermentation. During this time the mash or the must was regularly stirred and circulated, so that the on the Most floating marc (grape skins) in which polyphenols, flavors and tannins are better solved and can pass into the must / wine. Immediately after the alcoholic fermentation, follows the malolactic fermentation, in which the malic acid contained in this organic wine is converted to lactic acid. The subsequent aging takes place in large oak barrels and in barriques of different ages and duration.
