  • Colour: fresh, rich purple fresh, which turns into ruby red during storage
  • Nose: stimulating fruity-spicy fragrance that is quite typical of the Syrah grape
  • Palate: Red wine dominated by the Syrah grape with intense aromas of red berries and spices. Well structured with neat tannins. Pleasant and long finale
  • Serving suggestion:  Serve at about 16 ° C. Let it breathe for 1 to 2 hours in a wide-bellied carafe so that its flavors can unfold. Please pour carefully into the decanter or into the glass, because during storage a depot could have formed.

The grapes are traditionally picked by hand. A part is separated from the panicles and fermented spontaneously together with the larger part of the grapes with panicles by means of the so-called semi-carbonique maceration, i.e. with the whole, undamaged berries still on the panicles. Spontaneous fermentation means that no foreign yeasts are added to the grapes, but that fermentation is fermented with the yeasts on the grapes. However, this assumes that the grapes have not been treated with fungicides in the vineyard. Only with these original yeasts of the grapes can the characteristics of the grapes, the soil and the climate be expressed in the organic wine. This is followed by what is known as lactic acid fermentation, in which the more aggressive malic acid contained is converted into the milder and more tolerable lactic acid. This red wine then matures and refines itself in barriques for a few months until it is bottled without filtering.

Organic wine - production, Château la Canorgue, Coin Perdu

Les raisins du Coin Perdu proviennent d'un vignoble dont les vignes ont plus de 100 ans. Les cépages Syrah, Grenache, Mourvèdre et Cinsault ont ensuite été plantés dans un vignoble en «coffret mixte». Ils mûrissent ensemble et sont également récoltés et transformés à la main ensemble. Cependant, la récolte n'est que de 20 à 25 hectolitres par hectare, il est compréhensible que ce vin coûte un peu plus cher que les autres vins bio du Château La Canorgue. La vinification suit les méthodes traditionnelles en ce sens que 50% des raisins sont débarrassés des tiges et des panicules et 50% des tiges et des panicules dans la purée sont fermentés spontanément avec la propre levure du raisin pendant une période de 20 jours. Ensuite, 30% du vin est élevé en demi muids, qui sont des barriques en chêne d'une capacité de 650 litres. L'autre partie de ce vin bio est élevé en cuves inox. Le vin n'est pas filtré.

Dany Chastan, one of the two charming daughters of the winemaker is responsible for winemaking in the cellar. She shapes the traditional style of wine as to Region, Grape and soil fits best. In early October, the grapes are harvested manually in optimum ripeness, followed by a slow fermentation in mash tubs for about 18 days without the addition of selected yeasts. During this operation, grape skins floating on the wine are regularly stirred with the must in order to detach all of the ingredients contained in the skins. During the subsequent 12-month aging in large oak casks, this organic wine is three times moved to different barrels, wherein the solids remain in each case on the barrel bottom. In this way, the wine clears itself without having to be filtered. arole Chastan (the 2nd Daughter) takes care of the management of the Clos du Joncuas.

In this way, the organic wine without having to be filtered clears itself.

Seguret is seen from the viticultural view a small independent appellation, slightly higher classified in its hierarchy as a Côtes du Rhône Village. But Seguret is also a small picturesque village on the western side of the Dentelles de Montmirail, a rocky mountain range between the Rhône and the famous Mont Ventoux.

Organic wine profile

  • Color : As long as it is young, this wine has a deep, lingering purple which, with increasing maturity, transitions into purple and finally into dark brick red.
  • Nose : the intense aromas are composed of red and black fruits in their youth. As the maturity grows, more and more spicy notes are added, as well as a light touch of woody notes.
  • Palate : the taste is fresh, fruity and full-bodied, with a very mature maturity (from 4 years), very dense, with a feeling southern, velvety soft on the palate but with mature tannins which provides a long finish.
  • Serving suggestion: 16° C is the right temperature. It goes well with roasted duck breast with sour cherry in balsamic sauce, to a steak of beef, game, venison, also mature cheese varieties.

At the beginning of October, the grapes are harvested in an optimal state of ripening by hand and fermented slowly in mash tunes for approximately 18 days. During this process, the grape husks floating on the must are regularly mixed with the liquid so that all the ingredients in the dishes can dissolve and pass into the must. During the subsequent 12 months aging in large wooden barrels, the wine is filled three times from one into another barrel, the solids remaining on the bottom of the barrel. In this way the wine can be clarified without having to be filtered.

The organic wine Clos du Joncuas Gigondas, like all the wines from the winery, has been produced without chemicals since 1956. You can see, smell, taste and feel its absolute purity. 

 

Organic wine - profile

  • Colour: very beautiful and dark crimson.
  • Nose: its youthful, fruity scents of light and dark stone fruit, also red and black berries, become sweetish spices and woody notes with increasing maturity Notes are added.
  • Mouth: Its complex aromas, dominated in its youth by stone fruits (black fruits, red fruits) develop into spicy and woody notes when they have reached full maturity.
    It is a harmonious and authentic organic red wine that reflects the Clos du Joncuas terroir. Harmonious, velvety on the palate and a very long-lasting aftertaste.
  • Drinking recommendation: serve at 16 to 18° C.

 

Organic wine - preparation, Clos du Joncuas, Gigondas

CLOS DU JONCUAS, in the heart of the Gigondas vineyard, is a unique organic winery in Gigondas for its location, soil, cultivation and winemaking method. 

 

The geographical, geological and climatic conditions in
Gigondas, Vacqueras and Seguret

  • It is located in a privileged geographical position where the vines thrive on terraces in full sunshine and protected from the cold mistral winds by the Dentelles de Montmirail mountain range are.
  • The soil in the vineyards is composed of elements of the oligocean and limestone from the Triassic epoch (about 230 million years ago), with red-ocher colored Earth and dolomite with gypsum and cargneules (a carbonate sedimentary rock).
  • The climate is hot and dry, with 2,800 hours of sunshine per year.
  • The mistral is the prevailing wind.
  • The grape varieties are Grenache (80%, the rest are Mourvedre, Cinsault and very small proportions of old grape varieties that are still scattered throughout the vineyards.< /li>
  • The grapes are harvested manually at the beginning of October, very early in the morning when the weather is sunny and the temperature is still cool.
  • Vinification follows the traditional style of the region in cement vats for the red wines of Clos du Joncuas and in stainless steel tanks for the rosé wines.
  • The temperature during winemaking (maceration and fermentation) is 30° to 33° C for red wines and 18° C for rosé wines. This process is initiated without the addition of foreign yeasts and takes 25 to 32 days. During this process, the grape skins floating on the must are regularly stirred with the must so that all the ingredients in the skins can be dissolved and transferred to the must.
  • The wines are made by racking, which is called transferring the wine from one container to another, leaving the solids at the bottom of the container. This is a time-consuming process, but it avoids fining and filtering the wine.
  • The aging of the red wines takes place in large oak barrels (no barriques) and lasts a year. Rosé wines mature in stainless steel tanks until April of the following year.

    The name Gigondas comes from jucunditas, which in Latin means joy and happiness. It became Gigondas over time. A village that has lived for two millennia at the foot of the Dentelles de Montmirail mainly from its vines and the wine that expresses the generosity of its terroir.

The vines thrive on soil created by the degradation of limestone rocks formed during one of the last cold periods of the Quaternary. The vineyard has been certified organic since 2006 and biodynamic methods according to Demeter since 2015.

The grapes are harvested exclusively by hand, completely destemmed, macerated according to the traditional method for 3-4 weeks and then fermented for 15 to 20 days in conical tanks at a controlled temperature. Aging in French oak barrels for 12 to 14 months, then 3 months in large tanks and 1 year in the bottle before leaving the winery for the first time.

Carra, which means stone, is the pre-Roman origin of the word garrigue. This cuvee is a tribute to the calcareous stone of the terroir that gives its typicality and its originality to this wine.

Biodynamic Wine - Profile  Demeter-Logo

  • Colour: Deep and intense, dark garnet colour.
  • Nose: Aromas of black and red fruits, such as strawbrry, blackberry, blueberry… with spicy and liquorice hints.
  • Mouth: Aromas of garrigue and black olive. A fat and smouth wine, with volume. Long-lasting aromas in the mouth.

The vines were planted in vineyards in the Pic Saint-Loup appellation, on soil formed by the quarrying of Quaternary limestone. These peculiarities result in fine and elegant wines, rich in the characteristics of this unique terroir.

The grape harvest is done by hand or mechanically according to the plots. The grapes are entirely destemmed, followed by a traditional winemaking process with 3 to 4 weeks maceration in concrete tanks and conical trunk tanks. Temperature control during the winemaking process. Aging in concrete tanks during 12 months minimum.

Biodynamic Wine - Profile  Demeter-Logo

  • Colour: Garnet red with brilliant reflections.
  • Nose: Aromas of dried figs, quince paste, garrigue and liquorice. A subtle and greedy fine nose.
  • Mouth: Aromas of fresh red berries, spices (pepper) and garrigue (laurel, thyme), accompanied by a note of menthol. An aromatic mouth with velvety tannins.

 

Biodynamic wine - Made by Château de Lascaux, Languedoc AOC, garrigue, red

The vineyards are 130 m above sea level on a gently rising south-east slope. The soil consists of clayey loam and limestone fragments from the erosion of limestone rock, which has mixed with marl and marl-limestone, it is good at absorbing and storing water. In the Mediterranean climate with longer periods of drought, this ability has a very positive effect on the ripening of the grapes.

This vineyard, planted with the Syrah, Grenache and Mourvedre grape varieties, has been going organic since 2006 and since 2018 using biodynamic methods following the Demeter guidelines managed. In order to ensure the health of the grapes and to promote their natural potential for rich flavors and aromas, we use natural, self-produced compost, medicinal plant preparations, silica and horn manure. This also increases the fertility and biodiversity of the soil in the vineyards, but also the resistance of the vines to various unfavorable influences of climate change.

Depending on the plot, the grapes are harvested manually or by machine and completely destemmed. The actual winemaking begins with a 3 to 4 day maceration of the lightly crushed grapes and a 14 day alcoholic fermentation at a controlled temperature. The aging of this biodynamic wine in concrete tanks takes 6-8 months.
