Domaine la Marseillaise, IGP de Var Merveillement, white, biodynamic wine, Demeter, 2022, from € 16,55

It is said that biodynamically produced wines have a certain something that other wines lack. It's hard to describe, perhaps it's the complexity and harmony of the Domaine la Marseillaise IGP de Var Merveillement wine that exemplifies it? Judge for yourself, we are curious about your opinion.

Speaking of IGP or country wine: Why is this wine "only" a country wine? Not because it is less good than an AOC (quality wine), but because the Viognier grape variety was also used, which is not permitted for an AOC wine from the Côtes de Provence appellation and is therefore not typical. However, this does not detract from the quality of this biodynamic wine!

Biodynamic Wine - Profile   Demeter-Logo

  • This is what it looks like: light straw yellow
  • This is how it smells: intense, spicy-fruity bouquet with floral accents
  • This is how it tastes: full-bodied, creamy and soft on the palate with intense fruity aromas and a lot of taste that lasts for a long time
  • My recommendation: enjoy this white organic wine at a temperature of 10 - 12° C from a large glass in which its aromas can develop better than in a small glass.

Biodynamic wine - Elaboration, Domaine la Marseillaise, IGP du Var, Merveillement, blanc

The vineyard soil, which contains clay and sand, and the vines growing on it are cultivated and cared for with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 20 years old (Ugni Blanc) and 5 years old (Vermentino and Viognier). The grape harvest, an average of 50 hectoliters per hectare, is carried out by hand and brought to the winery in 20 kg containers, where they are immediately destemmed, lightly crushed and macerated for a short time in contact with the skins of the grapes. The fermentation starts spontaneously with the grapes own yeasts. It lasts 4 weeks at a fermentation temperature of 18 to 20°C. This biodynamic white wine then matures for 3 months in stainless steel tanks on its fine lees, which is stirred regularly. It is not clarified with agents containing protein, but only lightly filtered before bottling.

Biodynamic wine - processing, Domaine la Marseillaise, "Abondance", red

The loamy vineyard soil and the vines growing on it are processed and maintained with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 35 years old (Cinsault), 18 years (Merlot) and 5 years (Marselan). These three grape varieties ripen at the same time and are harvested together by hand and brought to the winery in 20 kg containers. Here they were freed from stems and panicles and fermented in the mash at 20 to 22 ° C with their natural yeasts. After the liquid has reached a density of 1035, the liquid is separated from the pomace and finally fermented. The red organic wine then matures on the lees for 3 months. It is not cleared with protein, but only slightly filtered.

Why is this high quality red wine just an IGT du Var and not a Côtes de Provence AOP? Because also the Merlot grape variety was used, which is not approved for a Côtes de Provence.

It is difficult to describe, perhaps it is the complexity and harmony of the Domaine la Marseillaise, Côtes de Provence, biodynamic wine rosé. The Provence is famous for its excellent rosé wines, and this rosé is a particularly fruity and flavorful wine that is exemplary. Judge for yourself, we are curious about your opinion.

The loamy vineyard soil and the vines growing on it are processed and maintained with the greatest care according to the principles of biodynamic agriculture according to Demeter. The vines are 18 years old (Syrah and Grenache). They are harvested by hand and brought to the winery in 20 kg containers, where they are freed of stems and panicles, lightly squeezed in a grape mill and immediately pressed. Château Romanin Alpilles IGP red, biodynamic wine,  2020, from € 12.90

The biodynamic wine  Château Romanin Alpilles IGP red is "only" a local wine, but of far above average quality. A quality that derives from biodynamic production according to Demeter guidelines, which requires a particularly careful work in the vineyard. It is a valuable and very pure organic wine from young vines that wash outside the AOP zone. The crop has been limited to increase its quality.

Biodynamic wine - profile   Demeter-Logo

  • Color: brilliant garnet color with violet reflections.
  • Nose: The nose is decidedly fruity. The aromas of strawberry, black currant and blackberry harmonize wonderfully with notes of cherry and liquorice.
  • Palate: on the first touch it my mout, I liked the mild, delicate and likeable impression that this wine conveys. On the palate it is open, supple and long. I was happy to feel the aromas of red fruits, red currants, black
currants, blackberries, combined with liquorice and toasted notes.
  • Tasting tips: This cuvée goes perfectly with an orange duck marginet accompanied by a gratin dauphinois. You can even extend the pleasure of this biodynamic wine to dessert with a chocolate fudge and English cream.

Biodynamic wine - processing, Château Romanin, Alpilles IGP, red

The biodynamic working method is not new at Château Romanin, since it was introduced in 1988. At the time of planting, the different soils characteristic of the vineyards of Château Romanin make it necessary to choose the grape variety best adapted to each parcel. ground. This is a prerequisite for the production of organic wines of good quality, as well as low yields. This is precisely the approach in which Château Romanin fits. This should not overshadow the importance of the work of the vineyard. In other words, the size in winter, the binding of shoots in spring and the thinning of shoots and grapes during the growth and ripening phase. In viticulture and biodynamic winemaking, all stages of wine production take place according to astral activities. In the cellar or cellar, human intervention is limited as much as possible. The stems are removed from the berries, fermentation is done spontaneously with endogenous yeasts. The young wine is then aged for a few months in stainless steel vats. Shortly before bottling, this red wine is slightly filtered, and some sulphites are added to limit the oxidation.

Biodynamic wine - profile   Demeter-Logo

  • Drinking recommendation: enjoy this La Chapelle de Romanin organic wine with a temperature of 14 to 16 ° C already in the year after harvest or within 4-5 years from vintage indication.

Biodynamic wine - processing, Château Romanin, La Chapelle de Romanin

Especially the care of the vines in the vineyard, we owe the emergence of this paradisiacal wine. It begins with the cutting of the vines in the winter, in spring the shoots must be tied to the wires, during the vegetation phase the shoots grow extremely fast and must be thinned out several times. A few weeks before the harvest leaves are removed above the grapes so that they can still capture every ray of sunshine. The highlight of a wine year is the vintage. It starts when the most important and desired parameters "sugar, acidity and PH value" are reached. Of course, at the Château Romanin it is done by hand. By the way, during the grape picking by hand every single grape can be controlled and, if necessary, sorted out.

Experienced winemakers know that it is worthwhile to treat the vines in the vineyards well. Because the better the grapes, the higher the quality of an organic wine. In addition, during the wine processing it can be dispensed on many technical steps and other auxiliaries and additives. With this approach you get very close to the term "natural wine".  A term, which  is not exactly defined.

In any case, only a small amount of sulfur is added to this biodynamic wine, which prevents the oxidation of important flavor-enhancing ingredients in the wine and the enjoyment value is retained longer. Based on many years of experience in the tasting of natural wines or natural wines, we consider these terms more as a natural wines marketing tool than a promise of enjoyment. Moreover, it would be a shame if winegrowers worked hard for a whole year in the vineyard and end up presenting flawed and often inedible wines. That's why it's so easy here at the Château Romanin to make the best possible organic/biodynamic wines: The stems and panicles are separated from the berries, then slightly squeezed and fermented spontaneously in stainless steel tanks without the addition of foreign yeasts. Thereafter, the wine is transferred to another stainless steel tank. In the process, the pomace (berry skins) is left behind. Now the malolactic fermentation begins, as is the case with all red wines, converting the aggressive malic acid into the milder lactic acid. After several months of maturation, this wine produced according to the Demeter guidelines is only filtered, very little sulfur is added shortly before bottling.

Château Romanin,  Les Baux de Provence AOC, biodynamic wine, red, 2015, from € 30.85

One may not be convinced of the effect of biodynamics according to Rudolf Steiner, but of this red wine you will not only be convinced, but enthused. More thoughts, man power and care has been invested in this obiodynamic rganic wine from the Château Romanin than in many other wines at much higher prices.

Biodynamic wine - profile   Demeter-Logo

  • Color: deep, dense ruby red.
  • Nose: you can experience a wealth of complex scents that occur together or in tandem depending on temperature and oxygen contact individually or in combination: chocolate, coffee, dark chocolate, white pepper, notes of leather and mint. Add to that the fruity components of wild strawberries, blueberries, black currants and eucalyptus.
  • Drinking recommendation: serve now, or 15 years according to vintage, at 18 ° C. This wine could go well with truffles, porcini mushrooms, but also cheeses such as Saint-Marcellin, Chaource, Tomme de Provence, even a chocolate cake with roasted nuts.

Biodynamic wine - processing, Château Romanin, Les Baux de Provence, red

Although the grapes are read by hand in perfect ripeness, a further selection of the grapes is done on a reading table. The mash fermentation (must with berries without stems and panicles) lasts for 20 to 30 days in large stainless steel tanks and wooden barrels at a temperature of 24 ° to 26 ° depending on the grape variety. After the end of the alcoholic fermentation followed by a few weeks delay of malolactic fermentation (lactic acid fermentation). After that, the young wine matures for 18 months in large wooden barrels where it refines and reaches its initial drinking maturity.

Every work step, both in the vineyard and during winemaking in the
cellar, up to the filling of the bottle, must take place at a certain position of the moon and the stars.

Biodynamic wine - profile

  • Color: intense ruby red color with a beautiful shine.
  • Nose: The nose reveals aromas of black berries: black currant, blueberry, blackberry and floral notes of hawthorn and orange blossom. The woody note is delicate and particularly well fused with the richness of the aromas.
  • Mouth: as soon as the first drops flow over the lips into the mouth, they already provide a sweet pleasure experience. The tannins are silky, the aromas of black fruits are expressed. The finish is elegant and shows a great balance between minerality and spices
  • My drinking recommendation: This cuvée could accompany a roasted nut of an Iberian pork leg with a garlic cream sauce with new potatoes roasted with rosemary.

Every work step, both in the vineyard and during winemaking in the cellar, up to the filling of the bottle, must take place at a certain position of the moon and the stars.

Biodynamic wine - processing, Château Romanin, Les Baux de Provence, rosé

The different geological conditions present on the vineyards of Château Romanin were decisive during the planting of the vines. As a result, Grenache and Mourvèdre grapes were planted in 1991 on gravel soils (gravels and sand), followed by Syrah and Counoise on sandy-clay soils in 1992 and 1993 respectively. Production volume per hectare is low, which is a prerequisite in the production of quality wines. Harvesting is done by hand, and the grapes are then pressed gently. During a maceration at 10 ° C, the must clears and enzymes are released, which give the wine fruity notes. The liquid is then collected separately and fermented at a temperature between 18 and 20 ° C. This organic wine is then aged on lees in stainless steel vats for six months, during which it will undergo several batonnages.

Every work step, both in the vineyard and during winemaking in the cellar, up to the filling of the bottle, must take place at a certain position of the moon and the stars.

Biodynamique wine - processing, Château Romanin, Le Coeur de Romanin

The manually very carefully picked grapes for the Coeur de Romanin come from the best parcels of the Château Romanin. They were freed from the stems before they are fermented (3 weeks for Cabernet Sauvignon) and (4 weeks for Syrah and Mourvedre) in a traditional mash fermentation. During this time the mash or the must was regularly stirred and circulated, so that the on the Most floating marc (grape skins) in which polyphenols, flavors and tannins are better solved and can pass into the must / wine. Immediately after the alcoholic fermentation, follows the malolactic fermentation, in which the malic acid contained in this organic wine is converted to lactic acid. The subsequent aging takes place in large oak barrels and in barriques of different ages and duration.
