Organic wine - processing, Domaine de Marcoux, Lirac

The vines grow on limestone soil where successive erosion has deposited red clays, gravel, sand and pebbles on the surface.

The harvest is done manually, with the grapes first sorted in the vineyard and then brought back to the cellar in 50 kg cardboard boxes. A second sorting takes place in the cellar. The berries of the grapes are separated from the panicles, lightly crushed, then macerated in the mash, cooled. As with all Domaine de Marcoux wines, no foreign yeasts are used for fermentation. During fermentation, the temperature is regulated and the mash is pumped over daily. The aging takes place in concrete barrels and in foudres. Bottling usually takes place 18 months after harvest.

Organic wine - production, Domaine de Marcoux, Châteauneuf du Pape, white

The following grape varieties are permitted for the production of the white Châteauneuf du Pape: Roussanne, Grenache blanc, Bourboulenc, Picpoul, Clairette and Picardan.

For this vintage, Rousanne grapes were used, grown on half a hectare of the vine-yard "les esqueirons". which were planted in 1987 on the western slope of the
village hill. The Bourboulenc grapes come from the "les bousquets" vineyard. Some Clairette and Grenache Blanc grapes come from several scattered small plots, but they make up only 2% of the total.

The soils in the vineyards consist of clay, colluvium and chalk lime from the Barremic period.

The harvest is done manually in boxes of 50 kg. In the cellar, the grapes are pressed immediately, the juice is poured into stainless steel tanks, cooled so that the
solids settle and can be removed. The alcoholic fermentation can finally start with natural yeasts at a control of the temperatures around 17 ° C. As soon as the alcoholic fermentation is complete, the coarse yeasts are removed and the wine continues to mature on the fine lees lees in stainless steel tanks and vats. After about 7 months it is bottled.

The grapes are traditionally picked by hand. A part is separated from the panicles and fermented spontaneously together with the larger part of the grapes with panicles by means of the so-called semi-carbonique maceration, i.e. with the whole, undamaged berries still on the panicles. Spontaneous fermentation means that no foreign yeasts are added to the grapes, but that fermentation is fermented with the yeasts on the grapes. However, this assumes that the grapes have not been treated with fungicides in the vineyard. Only with these original yeasts of the grapes can the characteristics of the grapes, the soil and the climate be expressed in the organic wine. This is followed by what is known as lactic acid fermentation, in which the more aggressive malic acid contained is converted into the milder and more tolerable lactic acid. This red wine then matures and refines itself in barriques for a few months until it is bottled without filtering.

Organic viticulture has been practiced in the vineyards of Château La Canorgue since the 1970s, including elements from biodynamic viticulture. The harvest volume of the grapes, which were harvested manually at night at cool temperatures, was very low at 30 hl/hectare. This beautiful white wine is correspondingly tasty. This manual work costs significantly more than mechanical harvesting, but it ensures that only good grapes and nothing else end up in the wine press. The grapes are then lightly crushed so that some juice comes out and the so-called mash is created, which is cooled and macerated for a few hours. Fermentation takes place with the grapes' own yeasts (spontaneous fermentation) under a CO2 atmosphere in order to prevent contact with air and to be able to limit the addition of sulfite to a minimum. This white organic wine matured for 2 months in wooden barrels on fine yeast. This increases its flavor intensity and shelf life.

Manual grape harvest with only a small harvest. The vines thrive on soil created by the degradation of limestone rocks formed during one of the last cold periods of the Quaternary. The vineyard has been certified organic since 2006 and biodynamic methods according to Demeter since 2015.

The grapes are harvested exclusively by hand, completely destemmed, macerated according to the traditional method for 3-4 weeks and then fermented for 15 to 20 days in conical tanks at a controlled temperature. Aging in French oak barrels for 12 to 14 months, then 3 months in large tanks and 1 year in the bottle before leaving the winery for the first time.

Biodynamic Wine - Profile  Demeter-Logo

  • Colour: Garnet red with brilliant reflections.
  • Nose: Aromas of dried figs, quince paste, garrigue and liquorice. A subtle and greedy fine nose.
  • Mouth: Aromas of fresh red berries, spices (pepper) and garrigue (laurel, thyme), accompanied by a note of menthol. An aromatic mouth with velvety tannins.

 

Biodynamic wine - Made by Château de Lascaux, Languedoc AOC, garrigue, red

The vineyards are 130 m above sea level on a gently rising south-east slope. The soil consists of clayey loam and limestone fragments from the erosion of limestone rock, which has mixed with marl and marl-limestone, it is good at absorbing and storing water. In the Mediterranean climate with longer periods of drought, this ability has a very positive effect on the ripening of the grapes.

This vineyard, planted with the Syrah, Grenache and Mourvedre grape varieties, has been going organic since 2006 and since 2018 using biodynamic methods following the Demeter guidelines managed. In order to ensure the health of the grapes and to promote their natural potential for rich flavors and aromas, we use natural, self-produced compost, medicinal plant preparations, silica and horn manure. This also increases the fertility and biodiversity of the soil in the vineyards, but also the resistance of the vines to various unfavorable influences of climate change.

Depending on the plot, the grapes are harvested manually or by machine and completely destemmed. The actual winemaking begins with a 3 to 4 day maceration of the lightly crushed grapes and a 14 day alcoholic fermentation at a controlled temperature. The aging of this biodynamic wine in concrete tanks takes 6-8 months.

Biodynamic wine - Made by Château de Lascaux, Languedoc AOC, Garrigue, white

The vineyards are 130 m above sea level on a gently rising south-east slope. This vineyard is planted with 6,200 vines/hectare, the yield for this white Demeter wine was 39 hl/ha. It has been organic since 2009 and since< strong> Farmed in 2018 using biodynamic methods according to Demeter guidelines. Natural, self-produced compost, medicinal plant preparations, silicic acid and horn manure are used to ensure the health of the grapes and to promote their natural potential for rich flavors and aromas. This not only increases the fertility and biodiversity of the soil in the vineyards, but also the resistance of the vines to various unfavorable climate influences.

Depending on the plot, the grapes are harvested by machine or by hand. Completely destemmed. The pressing takes place after a short cold maceration. Clarification of the must by settling the solids, fermentation at cool, controlled temperature. Maturation of the Demeter organic wine in stainless steel tanks on the yeast for a period of 4 to 5 weeks.

  • Colour: intense, bright dark red colour.
  • Nose: Aromatic scents of black berries (blackberry and blueberry), sweet spices (vanilla, dark chocolate and notes of violets).  
  • Mouth: Very nice balance with a juicy texture, subtle notes of dark chocolate and delicate tannins. A very pleasant wine with a nice finish.

Biodynamic wine - preparation,  Château de Lascaux, Languedoc AOC, Garrigue Plus Que Nature, red

The grapes come from several vineyards planted on limestone soils in the heart of the garrigue and surrounded by Aleppo pine and green oak.

Depending on the plot, the grapes are harvested manually or by machine and completely destemmed. The actual winemaking begins with a 3 to 4 day maceration of the lightly crushed grapes and a 14 day alcoholic fermentation at a controlled temperature. The aging of this biodynamic wine in concrete tanks takes 5 to 6 months.

This cuvée was made from harvest to bottling without the addition of sulphites.
