The different geological conditions present on the vineyards of Château Romanin were decisive during the planting of the vines. As a result, Grenache and Mourvèdre grapes were planted in 1991 on gravel soils (gravels and sand), followed by Syrah and Counoise on sandy-clay soils in 1992 and 1993 respectively. Production volume per hectare is low, which is a prerequisite in the production of quality wines. Harvesting is done by hand, and the grapes are then pressed gently. During a maceration at 10 ° C, the must clears and enzymes are released, which give the wine fruity notes. The liquid is then collected separately and fermented at a temperature between 18 and 20 ° C. The manually very carefully picked grapes for the Coeur de Romanin come from the best parcels of the Château Romanin. The different grape varieties for this Demeter organic wine are each harvested by hand at a perfect degree of ripeness and then cooled to 10 ° C for 24 hours in a cold chamber and then selected again. A prerequisite for producing high quality wines is a lower yield, which is intended in the Château Romanin. The grape picking was manually performed. Afterwards, the grapes were sorted again on the conveyor  belt, the whole grapes were then pressed slowly, followed by pre-clarification at 10° C and the alcoholic fermentation at 18 to 20° C in stainless steel tanks. The malolactic fermentation, which then normally started, was suppressed to preserve the freshness of the wine.The maturation of this wonderful white organic wine on the fine yeast took 5 months. During this time a regular batonnage (stirring) was applied, which gives the wine deeper and more complex flavors, as well as a better shelf life.

The winemaking is done partially in accordance with the so-called Saigne method (the grapes are just crushed, and the juice drains off without pressing), and the other part is pressed directly. Fermentation is done at a low temperature in stainless steel tanks. Afterwards the wine has been filtered and bottled soon after.

The Domaine Les Béates, les Béatines Côteaux d'Aix en Provence organic wine red is of beautiful red colour and shades of purple, in the nose subtle nuances of spices and herbs which one can smell everywhere in the Provence. It’s very seductive on the palate with flavours of red berries and pleasantly smooth tannins. It goes well with typical spicy Provencal dishes such as ratatouille.

This year the wine harvest was particularly low for this organic red wine at 35 hl / hectare due to the dry weather. When fully ripe, the grapes were picked by hand, the stems removed and fermented for 15 to 21 days at a temperature of 25 to 35 ° C. The subsequent maturation of the wine in stainless steel tanks refined this red wine until it was bottled in autumn of the following year.

The Domaine Les Béates white is a very excellent organic wine made from handpicked grapes from older vines with a small harvest. Logically, such valuable grapes are processed into wine in the cellar with special care. The aging in large oak barrels also adds to the complexity of this wonderful white wine.

The grapes are harvested accordingly to the parcel's overall maturity. After maceration and fermentation, the wine ripens nine months in oak barrels with a capacity of 500 liters on the fine yeast with regular stirring. This long contact with the yeast gives the wine a long life without the excessive use of sulphites.  Afterwards this organic wine has been slightly filtered and bottled.
