The organic wine - processing, Poggio Ridente, Barbera d'Asti Superiore, DOCG, red

The harvest for this wine is only 50 hl / hectare. The grapes for this thrive in the vineyard San Sebastiano in the steep slope on the outskirts of Coconato and are harvested by hand.
After the berries are freed from the panicles, they are lightly crushed and turned into wine with a 10 to 12 day maceration. Only the grape's own yeast is used for this.

At the end of the alcoholic fermentation, only the first wine, obtained through gentle pressing, is used for this Barbera Superiore. This is followed by the conversion of the malic acid contained in the wine (not very digestible) into lactic acid. This process is also called malolactic fermentation. This red wine made from Barbera grapes is refined during 12 months of aging in barriques (2nd occupancy).

Organic wine - preparation, Cantina Loda, Padua, Garda DOC, red

The Cantina Loda vineyards are located just 5 km south of Lake Garda on moderately hilly terrain that is relatively easy to work with.

The vines at the age of 12 years (2021) grow on predominantly clay/loamy soil, which on the one hand is very fertile and rich in minerals, on the other hand, after prolonged rain, it is no longer passable with machines and can hardly be walked on. On the other hand, this soil becomes rock hard when dry and can no longer be worked.

The grapes of the Cabernet Sauvigon variety are harvested manually, destemmed immediately, and lightly crushed so that the juice can escape by itself in the mash tun and can macerate spontaneously (without breeding yeasts) in stainless steel tanks with the grape's own yeasts and begin to ferment. The wine is then transferred to another tank and the pomace (skin and stone) is very lightly pressed, which allows additional colors and flavors to be extracted. As the spring temperature rises, malolactic fermentation begins, converting the malic acid in the wine into lactic acid. This process is also called biological acid degradation...

The average harvest is  75 quintali per hectare, that's 3,750 kg of grapes that make about 2,800 liters of wine.

The DOC denomination (controlled designation of origin for quality wines) LUGANA may only be awarded to white wines from this region, 5 km south of Lake Garda.
Quality red wines from the Cantina Loda are marked with the DOC GARDA.

By the way, the Lugana wine region is partly in the province of Veneto and the province of Lombardy

.

Cantina Loda, MATINEL, Garda DOC, organic wine, red, from €9.60

Producing good organic wine can be so easy if all the requirements are met are available for this. That is the soil, the climate, the weather, the grape variety and its age, and finally the winemaker, who can interpret the interplay of these factors in the vineyard and in the cellar and react to them sensitively. With the Cantina Loda, Matinel Garda DOC, the brothers Umberto and Egidio Loda succeeded very well. By the way, Matinal is the name of the vineyard where the Merlot grapes for this wine were harvested.

Organic wine - profile

  • Color: purple
  • Nose: seductively scented with raspberries, blackberries and currants.
  • Mouth: these aromas are repeated on the palate where they are complemented with spicy components. A relatively powerful wine with a nice, smooth body and a long-lasting taste.
  • Drinking recommendation:  Enjoy this Merlot produced near de Lake Garda at a temperature of 15 to 17° C.

Organic wine - preparation, Cantina Loda, MATINEL, Garda DOC, organic wine, red

More than 40-year-old vines, whose roots have dug many meters deep into the ground, can still find sufficient water there, in which minerals accumulate, even after months of drought dissolved and absorbed by the roots of the vines. For this reason, wines made from such grapes tend to be more complex than those from younger vines.

On the Loda family's winery, all the grapes are picked gently by hand to avoid damage and oxidation before the winemaking process begins . Because this would cause the wines produced from them to lose their fruitiness, but also their natural aging ability. After the grapes arrive at the winery, the berries are run off the panicles and lightly squeezed so that part of their juice can run out in the mash tun and macerate. The subsequent fermentation in stainless steel tanks starts spontaneously with the natural yeasts present on the berries. It lasts about 20 days at a controlled temperature. The wine is then filled into another tank separately from the pomace, the pomace (berry skins and seeds) is lightly pressed in order to extract the wine that is still in it, but above all the colors and flavors in the skins. During a stay of several months in the stainless steel tank, the biological acid degradation takes place, during which the malic acid contained in the wine is converted into the more tolerable lactic acid.

Organic wine - profile

  • Color: It reveals a garnet red color
  • Nose: its scent is reminiscent of red berries, violets, roses, ripe plums.
  • Palate: very fruity, fresh aromas, strong, muscular body, well structured, with acidity and alcohol harmoniously integrated into the wine.

Organic wine - processing, Erbaluna, Nebbiolo Langhe, rot

The grapes are picked by hand from mid-October to early November. The fermentation of the mash takes place in large wooden barrels and takes up to 4 weeks. The wine then matures for at least 12 months in large barrels, in which the malolactic fermentation (see our organic wine lexicon) also takes place.

Erbaluna, Barolo DOCG, red, organic wine, 2014/15, from € 32.20

Barolo is one of three of the most famous Italian wines, named after the town of Barolo. This wine is made from 100% Nebbiolo grapes, including this very typical Erbaluna Barolo from the town of Montforte d'Alba, which we visited several times, including several times with our customers.

Organic wine profile

  • Color: It reveals a garnet red color with hints of oranges
  • Nose: its fragrance evokes violets, roses, ripe plums and truffles. In the background, you can hear the smell of oak barrels.
  • Palate: On the palate, you can notice a pleasant acidity, which overflows aromas of red fruits, spices and subtle tannins, which contributes to the structure and the long final note of this organic wine.
  • Tasting recommendation: 16 ° C to 18 ° C and let settle an hour before serving.

Organic wine processing, Erbaluna, Barolo

The grapes are harvested manually from mid October to the beginning of November. The fermentation is done in large oak barrels and lasts 4 weeks. After that, the wine ages for at least 24 months in oak barrels with a capacity of 225 to 600 liters. The wine is repeatedly decanted to separate the solid components (mud). In this way, the wine clarifies without being filtered.
