The biodynamically produced Château Romanin Les Baux de Provence AOC Le Cœur de Romanin is an organic wine of the absolute top class. It owes its existence to a good vintage with ideal weather conditions, as well as every imaginable care in the vineyard and in the cellar.

  • Nose:The Cœur de Romanin spreads intense and surprisingly diverse aromas of dark chocolate, coffee, leather, which soon ripe with aromas of black cherries, dark berries and spices such as mint and a touch of incense into a symbiosis.
  • Palate: Very rich and complex wine with lots of fruit, good structure, velvety soft, a fine nuance of wood and almost hidden mineral notes. Biodynamique wine - processing, Château Romanin, Le Coeur de Romanin

The manually very carefully picked grapes for the Coeur de Romanin come from the best parcels of the Château Romanin. They were freed from the stems before they are fermented (3 weeks for Cabernet Sauvignon) and (4 weeks for Syrah and Mourvedre) in a traditional mash fermentation. During this time the mash or the must was regularly stirred and circulated, so that the on the Most floating marc (grape skins) in which polyphenols, flavors and tannins are better solved and can pass into the must / wine. The grapes, which are harvested by hand in fully ripe condition, are separated from the stems and panicles and fermented for 3 to 6 weeks, depending on the grape variety and vineyard conditions. The maturation of the young wine takes place partly in large oak barrels and one-year barriques and lasts 3 to 6 months. After another rest period of several months in a stainless steel tank, the "assemblage" and the bottling are followed.

The perfect ripe grapes are harvested by hand, brought to the cellar in small boxes, where the stalks and panicles are removed. Then they are macerated for 3 to 6 weeks depening of the variety and the location of the vineyard, followed be the fermentation with the prapes own yeast.

The aging and refining of the young wine takes place in oak barrels with a capacity of 600 l, 500 l and 225 liters for a period of 9 months. Then comes the assembly, that is to say the fusion of single-varietal wines into a cuvée, which then matures and refines for another 9 months in large wooden barrels.

Organic wine - profile

  • Color: deep ruby red .
  • Nose: overwhelming scents of red fruits and berries reminiscent of a cherry jam, blackberries, exotic spices and dry wild herbs.
  • Mouth: impressively lively, dense and concentrated, juicy, seductive with a precise raspberry note, flowery pastille aromas and a hint of spice cake. Persistently long and smooth in the mouth, with a focus on ripe, soft tannins and floral persistence.
  • This characteristic basically applies to all Châteauneuf du Pape wines from the past 25 years with minimally different characteristics.

 

Organic wine - production, Domaine de Marcoux, Châteauneuf du Pape, red

The special feature are the large pebbles made of quartzite and clay that cover the soil of the vineyards here, as well as red sandstones and colluvium, chalk limestone from the Barremian. They store the warmth of the day, they are rich in minerals that can be absorbed by the deep-rooted old vines.

The manual harvest is based on the respective degree of ripeness of the grape varieties, which is different in each vineyard location. The grapes are sorted for the first time on the vine, which are then transported to the winery for further processing in boxes of 50 kg. Here the grapes are checked again on a sorting table and, if necessary, the less good grapes are sorted out. This is followed by the separation of the berries from the panicles, the light squeezing of the berries, whereby some of the grape juice already runs out. This mass is called the mash. It begins to ferment spontaneously with the grape's own yeast, which converts the sugar contained in the mash into alcohol and carbonic acid (escapes). During this process, which lasts 4 to 5 weeks, the temperature is regulated and the mash is pumped daily using the cap floating on it. This enables the extraction of the flavoring and coloring agents still contained in the berry pods, which pass into the wine. Maturation takes place for 18 months mainly in concrete containers and in a few barrels of 350 liter barrels.

A very good and typical Domaine de Marcoux Côtes du Rhône that initially looks a bit cool, after a little air contact opens up quickly, becomes supple and releases clear, seductive aromas.

 

Organic wine - profile

  • Color: bright ruby red
  • Nose: Generous aromas of red berries and fruits are complemented by spicy notes of black pepper and cardamom after a few minutes in the glass.
  • Mouth: pleasantly soft on the palate with fresh fruity aromas. Supple, ripe tannins provide good structure and a lasting finish.

 

Organic wine - processing, Domaine de Marcoux, Côtes du Rhône, red

 
The Domaine de Marcoux not only includes vineyards in the Châteauneuf du Pape and Lirac appellation, but also in the Côtes du Rhône appellation. There are 2 hectares near Orange, 1 hectare in a place called "Maucoil" and 1 hectare in a place called "Bois Lauzon". The vines grow on soils made of alluvium and clay. "We apply our working methods in the vineyard and in the cellar in the same way for all our wines. We harvest by hand, transport the grapes to the cellar in 50 kg boxes, and sort the grapes in the vineyard and in the cellar. We only use the yeast on the grapes for fermentation. The maturation of the Côtes du Rhône takes place in concrete tanks and lasts 10 months."

A very noteworthy wine that got better and better from vintage to vintage thanks to the biological work in the vineyards. The Domaine de Marcoux Lirac has been rated in the past few years by Jeb Dunnuck (an American wine critic) with 90 to 94 points.

  • Nose: lush scents of red berries and fruits with spicy, sweet notes of exotic spices.
  • Mouth: rich taste components of ripe red and black berries, compote of stone fruits, notes of fresh almonds. Fresh thanks to its fresh, fruity nature. Although it has a high alcohol content and a full body, it looks anything but clumsy and tired.

Organic wine - processing, Domaine de Marcoux, Lirac

The vines grow on limestone soil where successive erosion has deposited red clays, gravel, sand and pebbles on the surface.

The harvest is done manually, with the grapes first sorted in the vineyard and then brought back to the cellar in 50 kg cardboard boxes. A second sorting takes place in the cellar. The berries of the grapes are separated from the panicles, lightly crushed, then macerated in the mash, cooled. As with all Domaine de Marcoux wines, no foreign yeasts are used for fermentation. During fermentation, the temperature is regulated and the mash is pumped over daily. The aging takes place in concrete barrels and in foudres. Bottling usually takes place 18 months after harvest.
