Understand the word "ECLAT" in the old French sense as bang, splendour, shine, rise, burst. It is the story of a brief moment during the grape harvest for this rosé, when night gives way to day, the night slowly disappears and the first rays of sun touch the garrigue, the landscape takes on the color of the bright northern lights.

The grape harvest begins at night with a harvester under artificial light, because at this time it is still relatively cold. As the morning light increases, the harvesting process is completed and the grapes are immediately taken to the winery for winemaking. This avoids oxidation and preserves all the fruity aromas of the grapes. They are partially de-stemmed, cold pressed, macerated, pre-clarified and fermented at a controlled, low temperature. The aging of this biodynamic wine in stainless steel tanks takes 5 to 6 months.

The grapes are harvested very carefully by hand, whole freed from stalks and panicles, lightly crushed and macerated overnight in the mash until the desired pink tint is achieved. Organic wine - profile

  • Color: vivid pink with orange reflexions
  • Nose: fine scent of raspberries and strawberries with notes of red currants and hint of sour cherries.
  • Mouth: resh, fruity and lively on the palate, very harmonious and pleasant.
  • Drinking recommendation: Serve at 9-10° C, it is suitable as an aperitif - spare your guests at this point with sweet long drinks that have recently  been in vogue. Goes well with cold or warm starters, grilled dishes, vegetable noodle or rice dishes.

 

Organic wine - preparation, Bodegas Bagordi, Rioja Navardia rosé

The organically grown grapes from the vineyards of the beautiful Baztan Valley are harvested manually and immediately afterwards brought to the wine cellar, where they are pressed and fermented with great care and the young Rioja Navardia Rosado is aged  in stainless steel tanks for several month before it it bottles in Spring after the vintage.

Vins el Cep rosat de Terrer is a classic, dry and light organic wine that has not been added or removed except for a small amount of sulfur. So in the style of an original winemaking process and of course it was also bottled in the winery.
 

Organic wine - Profile

  • Color: reddish, onion skin-colored.
  • Nose: dfirst a delicate, mild bouquet that increases after a few minutes and releases notes of sweet red berries and violets.

Organic wine - making, Vins el Cep, rosat de Terrer, Origin Terrers

The cellar includes 100 hectares of vines, of which 30 hectares are cultivated biodynamically according to the criteria of the Demeter Association and 70 hectares in organic farming. Since the grapes of all winescome from vineyards resulting from organic and biodynamic agriculture, with a few exceptions, they cannot be declared as such according to the Demeter rules in force. Over the next few years, all the vineyards will be converted to biodynamic viticulture.

This wine comes from a Pinot Noir vineyard in Can Prats in Sant Llorenç d'Hortons, in the privileged area of ​​Costers de l'Anoia. This vineyard was planted in 1990 and has since been cultivated and maintained according to ecological principles.

The harvest began at the beginning of August 4 by hand with rigorous selection and rapid subsequent processing. The grapes slid into the press by gravity, initially 45 to 50% of the grape juice flowed from the grapes without pressure, the rest of the grapes were extracted with light pressure. This released enough red color from the berry skins that maceration was no longer necessary.

Subsequent fermentation in stainless steel tanks took place spontaneously with yeasts temperature-controlled natives.
