Biodynamic wine - preparation, Château Haut Bages Liberal, Cinqieme Grand Cru Classé, Pauillac, red, 2021

2021 was one of the best vintages of the past decade for Cabernet Sauvignon grapes in the Medoc. With an unusually high 90% proportion, they set the tone at Château Haut Bages Liberal and are responsible for the great class of this organic wine. The Merlot grapes, on the other hand, were affected by mildew and had to be picked very carefully during the manual harvest. As a result, their crop yield was significantly lower than normal. Overall, the average yield fell to 40 hl/hectare.

In biodynamic viticulture and winemaking, it is common practice to mix the must spontaneously with and without the yeasts found on the grapes to ferment so-called pure yeasts or aromatic yeasts.

40% of the wine matures for 16 months in new barriques, 40% in second-occupancy barriques and 20% in amphoras and concrete.

Merlot and Cabernet Franc - grapes for this wine thrive in a vineyard on the plateau with clay and calcarious soil. They are harvested by hand and transported to the winery in small boxes. The next step is careful sorting of the grapes upon arrival in the vat room.
Fermentation takes place in thermoregulated tanks with gentle and slow extractions, adapted to the potential of each tank.
The average yield per hectare is 40 hl/ hectares. 50% of Château Fonroque's wines are aged in barriques and 50% in oval concrete tanks, modeled on ancient clay amphoras.

The biodynamic wines from Château Fonroque are naturally rich and distinguished. Clay in the soil gives them strength and depth. Limestone brings with it an assertive mineral character. Ca Fiui has been known for centuries as a hilltop estate. Here, surrounded by vineyards and olive trees. The vineyards of Corte Sant Alda are exposed to the sun all day, providing mature grapes that give this Valpolicella character, strength and balance.

Corvina Grossa, Corvina Veronese, Rondinella and Molinara are the main grape varieties for this Valpolicalla, but there are also other local grapes added such as Croatina and Rossara. They all thrive in the vineyards of Tomasotti, Bianchini, Rossetti and Cavallero. Together, they cover 4.8 hectares, planted with 6,400 to 9,300 vines per hectare. Like all Corte Sant Alda vines, they are certified organic, but are farmed for several years using biodynamic methods.

The wine harvest is carried out traditionally by hand and begins in early October. The alcoholic fermentation in oak barrels begins spontaneously with the natural yeasts on the grapes. During this time, the skins of the berries are floating on the must are regularly stirred with the must. It follows the lactic acid fermentation and a 6 month maturation.

The experience gained over many years with the different ways of working in the vineyard and cellar, with the aim of improving the quality of the Mithas of the year and not just producing a wine that is accepted by the market, which is correct or good, but the is better, even excellent, seems to have been achieved with this vintage. Of course, the results vary from year to year, not only in quality but also in quantity, and in some years there is no Amarone or Mithas. The grape varieties Corvina and Corvina Grossa for Mithas thrive in the “Macie” vineyard at an altitude of 350 m on a south-western hillside location with long hours of sunshine. The working method follows the biodynamic rules. The chalk soils are stony and barren. When fully ripe, the grapes growing on it provide impressive individuality, full of concentration and abundance of aromas. The grapes are always picked at the end of October. The fermentation takes place in oak barrels without pure yeast and takes about 20 days without temperature regulation. After 2 years of aging in 500 l barrels, this organic wine is bottled.

Life is made up of cycles, and so is wine. They make us improve, grow, and develop ourselves and what we do. And so this wine "Cíclic" pays homage to all who appreciate it. It is a white wine made from the best Grenache blanc grapes from the Vinya Núria vineyard. It matures for years in the bottle, in which it can further develop and accentuate its complex variety of fresh and mineral nuances.

The harvest is carried out by hand at dawn when the temperature is still cooler. Immediately afterwards the grapes are brought to the winery in small boxes thus avoiding damaging them and to preserve its fresh aromas. Another step to achieve this goal is to cool the grapes to 6 ° C and only then squeezed and pressing them.

The fermentation of the mash begins spontaneously with the yeasts naturally present on the grapes. The wine then matures in barriques for nine months, which gives it a pronounced complexity.
